These delicious Herb and Parmesan Oven Roasted Potatoes is one of my favorite sides! They require just a few minutes of prep and they come out wonderfully crispy on the outside and fluffy in the middle. They are easy enough to serve with a weeknight meal, and fancy enough that they are perfect for holidays and larger family celebrations like Easter, Thanksgiving and Christmas.

Roast potatoes get a make over with this recipe! They are so loaded with flavor, they truly are a restaurant quality side dish, but they are so quick and easy to make! They are perfect to serve with so many dishes and really turn a meal into a feast! Made with simple ingredients, you have to give these a go!

Suuuper easy to make! I loveee potatoes! Even though I can’t have them all the time, I always enjoy a smaller portion when I make it for the family. I can never pass on potatoes, pastas and desserts.

Why These Parmesan Roasted Potatoes Are So Good!

  • Simple and easy: These potatoes take minutes to prep! Cut them in half, roll in the seasoning and in the oven they go! They are so effortless!
  • Flavorful: These potatoes are seasoned with parmesan and a mixture of herbs and spices. They are wonderfully vibrant in flavor and make such a great addition to any meal.
  • Low in fat: A lot of roasted potato recipes call for quite a lot of oil, but these only require 2 tablespoons and they still come out wonderfully crispy!

Ingredients You Will Need

The chances are, you will already have a lot of these ingredients in your cupboard!

  • Red baby potatoes: Red potatoes have a very thin skin so you don’t need to peel them, and I love the color they add to the dish. I like to use baby ones so they simply need to be cut in half.
  • Herbs and spices: Salt, paprika, onion and garlic powder, pepper, fresh rosemary
  • Cornstarch: To help the potatoes get nice and crispy.
  • Garlic cloves
  • Parmesan cheese: Use freshly grated if you can, it has a much better flavor than pre-grated, which can also be very dry.
  • Olive oil

How To Make Parmesan Roasted Potatoes

Cut the potatoes in half and give then a rinse under a cold tap.

Add the rest of the ingredients to a bowl, add the potatoes and toss well to coat.

Line a sheet pan with parchment paper and place the pieces of potatoes on it leaving space between them.

Grate or sprinkle some more parmesan cheese on top of the potatoes. Not a ton, just a little bit to get that golden parmesan crush look on top.

Bake until the potatoes are soft in the middle and crispy on the outside.

Recipe Notes and Tips

  1. One you have rinsed the cut potatoes, let them dry for a few minutes. I pat them dry with a kitchen towel to move on faster with the rest of the recipe.
  2. Choose similar sized potatoes so that they cook evenly. I like to use baby potatoes that just require to be cut in half, but you can use larger potatoes and cut them into quarters.
  3. Don’t be tempted to add more oil, they just need a couple of tablespoons.

What are the best potatoes to roast?

I like to use red skinned potatoes, I love the color they add to the table and they get nice and fluffy in the middle. You can find red potatoes anywhere and almost every grocery store in the U.S. If you live overseas and don’t have them in your grocery stores, you can always use golden potatoes for this recipe and just cut them into evenly sized pieces.

How do you know when the potatoes are cooked?

The potatoes will take about 30-40 minutes to roast, depending on the size. You can always insert a toothpick after 30 minutes to make sure they are tender and soft. If it’s a little hard, give it another 10-15 minute. I like mine to still have a little crunch and not very overcooked. So it’s all based on your preference.

Can you make them ahead of time?

These parmesan roasted potatoes are a great make ahead side dish. You can coat them in the herbs and spices and keep them covered in the fridge for up to 24 hours before you are ready to cook them.

You can also roast them, and then keep them covered in foil in the fridge for two to three days and reheat them in the oven to serve.

You can serve this Oven Roasted Parmesan Herbed Potatoes dish with almost anything like I mentioned before. I love serving it with some sort of protein since it has carbs. I would typically either grill some chicken, steak, shrimp or salmon. Whatever way you decide to eat these potatoes, I hope you try and enjoy them!

Oven Roasted Parmesan Herbed Potatoes

This Oven Roasted Parmesan Herbed Potatoes recipe is a very simple and flavorful dish that can be served as a side with almost any dish.
Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes
Servings: 6 servings

Ingredients 

  • 2 lbs. red baby potatoes
  • 1 tsp. salt
  • 1 tbsp. paprika
  • 1 tsp. corn starch
  • 1 tsps. onion powder
  • 1 tsps. garlic powder
  • 2 garlic cloves, minced
  • 1/2 cup grated parmesan cheese
  • 2 tbsps. olive oil
  • 2 tsp. fresh cracked black pepper
  • 1 tbsp. fresh rosemary, finely chopped

Instructions 

  • Wash, and slice the potatoes. Rinse and pat dry.
  • Place potatoes in bowl and season with all the ingredients.
  • Line a sheet pan with parchment paper and toss the potatoes on it, leaving space between each piece
  • Sprinkle or grate some more parmesan cheese on top.
  • Bake in a preheated 400 degree oven for 30-40 minutes until tender.
  • Remove, let it cool down and serve.
