For the potatoes

  • Potatoes: Use medium russet potatoes for sturdy fries that are tender on the inside but hold up well to the sauce. 
  • Water + Salt: for cooking the potatoes.
  • Cornstarch: gives the potatoes a crispy coating.
  • Seasoning: season the cornstarch with salt and freshly ground pepper
  • Oil: Select your favorite oil to deep fry.

Sweet Chili Sauce ingredients

  • Oil: Use any light, neutral-flavored oil. 
  • Aromatics: Minced garlic and ginger add a warm, earthy flavor and aroma. 
  • Crushed Red Chili Flakes: Adds an extra boost of heat. Reduce or omit for less heat. 
  • Honey: Use local raw honey when possible. Substitute with pure maple syrup. 
  • Tomato Ketchup: Use your favorite brand of ketchup. 
  • Soy Sauce: Substitute gluten free soy sauce or amino acids to make this recipe gluten free. You can also use low-sodium soy sauce. 
  • Red chili paste/sauce: Chili paste has a stronger garlic flavor and less funky flavor than gochujang sauce. 
  • Rice Vinegar: Use apple cider vinegar if you don’t have any of this sweet vinegar on hand. 
  • Cornstarch + Water: to thicken the sauce. 
  • Sesame Seeds: Sesame seeds add a bit of crunch. 
  • Green Onion: Chopped for garnish. 

How To Make Honey Chilli Potato

  • Prepare the potatoes. Wash and peel the skin of the potatoes. Cut the potatoes like french fries and add them to water to remove the starch.
  • Cook the potatoes. Meanwhile, heat a large saucepan with 4 cups of water and salt. Once the water starts boiling, add the potatoes and cook until 50% is done. Drain the potatoes from the water and transfer them to a wide bowl.

  • Dredge the potatoes. Add the cornstarch, salt, and pepper to the potatoes and coat them well.

  • Fry the potatoes. Meanwhile, heat oil in a wok, slowly add the potatoes, and deep fry them until crispy and golden. Repeat the same with the remaining potatoes and set them aside.

  • Prepare the sauce. Heat a medium pan. Add oil, garlic, and ginger. Saute for 2 minutes. Add honey, ketchup, soy sauce, red chili sauce, and rice vinegar. Reduce the heat to low and add water. Once the sauce begins to simmer, add in the cornstarch slurry ( 1 teaspoon cornstarch + 1 tablespoon water). Cook until the sauce begins to thicken.

Can I oven-roast the potatoes?

If you prefer to cook these in the oven rather than roasting, it’s easy to do. Slice and soak the potatoes as directed. Dry thoroughly and toss with 1 tablespoon of oil. Spread the potatoes on a baking sheet and roast in a 400 degrees F oven for 30-40 minutes or until golden and crunchy. Prepare the sauce and coat the potatoes. 

Can I use sriracha instead of red chili sauce?

You can make these chilli fries using frozen french fries to save time. Bake or fry them according to the package directions, then proceed with the recipe as written.

Ingredients 

For the potatoes

  • 4 medium russet potatoes

  • ¼ cup water
  • 1 teaspoon cornstarch + 1 tablespoon water
  • 1 tablespoon sesame seeds
  • 2 tablespoons green onion, chopped
