  • Prepare the equipment. Preheat the Air Fryer to 400 degrees F.

  • Make the egg roll filling. In a large bowl, combine the chicken, cream cheese, black beans, corn, cheddar cheese, onion, jalapenos, cilantro, taco seasoning, and lime juice. Mix it until everything comes together.

  • Fill and seal the egg rolls. Place an egg roll wrapper on a cutting board, and wet the edges of the wrapper with water. Add 2-3 tablespoons of prepared chicken mixture to the center of the egg roll wrapper. Roll once and fold the side ends inwards. Now tightly roll the wrapper and seal the edges.
  • Prepare for air frying. Brush the egg rolls generously with olive oil and place them in the Air Fryer basket.

  • Most air fryers can fit about six egg rolls at a time. Don’t overcrowd the air fryer, and cook in batches if necessary. 
  • If cooking in batches, keep the remaining eggrolls covered with a damp paper towel. Cooked egg rolls can be kept warm in a low oven. 
  • Flip halfway through the cooking time.

Ingredients 

  • cup rotisserie chicken, shredded
  • 8 ounces cream cheese, at room temperature
  • 1 cup canned black beans, drained and rinsed
  • 1 cup frozen sweet corn, thawed
  • 1 cup cheddar cheese, shredded
  • ¼ cup yellow onion, diced
  • 2 tablespoons jalapenos, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons taco seasonings
  • ½ tablespoon fresh lime juice
  • 12 egg roll wrappers
  • 1 tablespoon olive oil
  • Chopped parsley, to garnish
