I love healthy salads and this Southwest Shrimp Quinoa Salad is absolutely delicious and filling. It’s very healthy and can basically be made with any Chicken, or if you are vegetarian, you can prepare this salad with Tofu or no proteins at all. If you are on a healthy diet, this salad is a perfect addition to your recipe list.

WHAT IS QUINOA?

Before i start on the process of how to make the Southwest Shrimp Quinoa Salad, I would like to talk a little about Quinoa. Many of you might have never tried Quinoa before or know what it is. Quinoa is an ancient grain that’s used in many recipes and a substitution for rice because it’s a healthy carbohydrate that is high in protein, fiber and many other beneficial mineral’s. Quinoa is also gluten-free. This grain has grown to be very popular in the United States and can be found in mostly all store. I like buying the big bag from Costco because it’s a great deal. Quinoa also comes in different colors, but I prefer using the plain white color. It’s cooks well and it usually looks more appetizing.

HOW TO MAKE THE SOUTHWEST SHRIMP QUINOA SALAD:

The best way to start is to cook the quinoa according to the package instructions. Then you will prepare the shrimps. For this recipe I used some baby shrimps, and they were raw. I pan seared them with some olive oil, lemon juice and light taco seasoning.

Then you can prepare the vegetables needed for the recipe. I used some corn, black beans, cherry tomato, green leaf onion, and a little bit of chopped purple onions. You add in the quinoa and the wrong with the vegetable ingredients and toss together with the salad dressing, which is basically just lemon juice, garlic, olive oil and some salt. Keep it simple so you can enjoy the other flavors of the ingredients.

Ingredients 

SHRIMP:

  • 1 lb. baby shrimp, raw
  • 1 tbsp. olive oil
  • 1 tsp. taco seasoning
  • 1 tbsps. lemon juice

SALAD INGREDIENTS:

  • 1 cup quinoa, cooked
  • ¾ cup corn
  • ¾ cup black beans
  • 1 cup cherry tomatoes, halved
  • ¼ cup purple onion, finely diced
  • ½ cup green onion, chopped

SALAD DRESSING:

  • 2 tbsps. lemon juice
  • 2 tbsps. olive oil
  • ¾ tsp. salt
  • ½ tsp. garlic, minced

Instructions 

  • Cooked quinoa according to package directions.
  • Marinate the shrimp. Prepare the shrimp in a skillet until fully cooked.
  • Prepare all the salad ingredients. Place everything in a bowl and toss in with the dressing.
  • Serve and enjoy.
