SHRIMP:
- 1 lb. baby shrimp raw
- 1 tbsp. olive oil
- 1 tsp. taco seasoning
- 1 tbsps. lemon juice
SALAD INGREDIENTS:
- 1 cup quinoa cooked
- ¾ cup corn
- ¾ cup black beans
- 1 cup cherry tomatoes halved
- ¼ cup purple onion finely diced
- ½ cup green onion chopped
SALAD DRESSING:
- 2 tbsps. lemon juice
- 2 tbsps. olive oil
- ¾ tsp. salt
- ½ tsp. garlic minced
Cooked quinoa according to package directions.
Marinate the shrimp. Prepare the shrimp in a skillet until fully cooked.
Prepare all the salad ingredients. Place everything in a bowl and toss in with the dressing.
Serve and enjoy.
