- Beef Brisket: Use a 4-pound brisket flat for leaner meat that slices well. For a richer option, choose a brisket point, or use a whole packer when cooking for a larger group.
- Yellow Mustard: Helps the dry rub stick evenly to the meat without adding a strong mustard flavor.
- Kosher Salt and Brown Sugar: Salt seasons the beef during the dry brine, while brown sugar adds mild sweetness to balance the savory spices.
- Seasonings: Black pepper, smoked paprika, chili powder, garlic powder, onion powder, and ground cumin create the smoky, savory flavor of the dry rub.
- Cayenne Pepper: Add it for extra heat, or leave it out for a milder brisket.

How to Make Oven Baked Beef Brisket
Prepare and Dry Brine the Brisket
Step 1: Trim the brisket. Remove the silver skin and any thick, hard fat, leaving about ¼ inch of the softer fat cap intact. Pat dry with paper towels.

Step 2: Coat with mustard. Spread the yellow mustard evenly over all sides of the brisket using a pastry brush or your hands.

Step 3: Make the dry rub. Combine the kosher salt, brown sugar, black pepper, smoked paprika, chili powder, garlic powder, onion powder, cumin, and optional cayenne pepper in a small bowl.

Step 4: Season the brisket. Sprinkle the dry rub over all sides of the brisket. Press the seasoning firmly onto the meat.

Step 5: Dry brine overnight. Place the brisket fat-side up on a wire rack set inside a baking sheet. Refrigerate uncovered for 8–24 hours.
Bake the Brisket
Step 1: Preheat the oven. Preheat to 275°F. Insert an oven-safe probe thermometer into the thickest part of the brisket.
Step 2: Bake uncovered. Place the brisket in the center of the oven. Bake until the internal temperature reaches 160°F, about 2 ½ to 3 ½ hours, depending on thickness.

Step 3: Wrap in foil. Remove the brisket from the oven and place it on overlapping sheets of heavy-duty aluminum foil. Drizzle some of the rendered fat over the top, then wrap tightly and seal the seams.

Step 4: Continue baking. Return the wrapped brisket to the oven and cook for another 2 to 3 hours, until the internal temperature reaches 200°F to 205°F. Begin checking for tenderness around 200°F.
Step 5: Rest the brisket. Remove it from the oven when a thermometer or thin skewer slides into the thickest section with very little resistance. Keep it wrapped and rest for 30 minutes.
Step 6: Slice and serve. Carefully open the foil and reserve the juices. Cut the brisket against the grain into ¼-inch slices. Spoon some of the reserved juices over the meat before serving.

Alternative Ways to Cook Beef Brisket
- Slow cooker beef brisket. Season the meat and cook it on LOW for about 8 to 10 hours. A little cooking liquid works well with this method. The brisket will come out tender with a softer surface rather than the seasoned crust produced in the oven.
- Pressure cooker beef brisket. Add the seasoned brisket to the pressure cooker with about 2 cups of beef broth. Cook on high pressure for 90 minutes, then let the pressure release naturally for 20 minutes before opening the lid. The brisket will be tender, but it won’t develop the same seasoned crust as the oven baked version.
- Braised beef brisket. Cook the brisket with beef broth and aromatics in a covered roasting pan or Dutch oven until tender. The cooking liquid keeps the meat moist and creates flavorful juices to spoon over the sliced brisket.
Tips for Making Juicy, Tender Brisket
- Avoid opening the oven frequently. Monitor the brisket with an oven-safe probe thermometer instead. Keeping the oven temperature steady promotes more consistent cooking from beginning to end.
- Choose a brisket flat with even thickness. Look for a flat that stays fairly thick from end to end without a very thin, tapered edge. A more uniform cut cooks more evenly and reduces the chance of the thinner end drying out before the thicker section becomes tender.
- Use a long, sharp slicing knife. Smooth, clean strokes make it easier to cut tender brisket without shredding or tearing the slices.
Ways to Switch It Up
Oven baked beef brisket with BBQ sauce: For a sweet and tangy variation, brush your favorite BBQ sauce over the brisket or serve it alongside the sliced meat.
Coffee-spiced brisket: Add finely ground coffee to the existing dry rub for a deeper roasted flavor that complements the brown sugar, smoked paprika, chili powder, and cumin.
Spicy brisket: Replace some of the chili powder with ancho or chipotle chili powder for a deeper chile flavor and more heat alongside the smoked paprika, cumin, and cayenne.

What to Serve with Beef Brisket
- Potatoes: Pair the brisket with Herb and Parmesan Oven Roasted Potatoes, Easy Au Gratin Potatoes, or Roasted Air Fryer Diced Potatoes for an easy potato side.
- Vegetables: Add Easy Mixed Vegetables or choose Oven Baked Brussels Sprouts or Brown Sugar Glazed Carrots for a vegetable side.
- Salads: Serve with Lebanese Fattoush Salad or Sweet Potato Quinoa Salad for something fresh alongside the beef.
Frequently Asked Questions
Start checking the brisket around 200°F. Pierce the thickest part with a thermometer or thin skewer. The meat is ready when the probe slides in easily. If the brisket still feels firm, return it to the oven and give it more time to cook.
Yes. Food-grade, unwaxed butcher paper works well for this slow oven baked beef brisket recipe. It allows some steam to escape, which keeps the crust firmer. Foil holds in more moisture and gives the crust a softer texture.
Storage and Reheating
Store leftover brisket in an airtight container in the refrigerator for up to 3 to 4 days. Keep some of the cooking juices with the meat to maintain its moisture.
For longer storage, you can freeze the brisket in a freezer-safe container or freezer bag for up to 2 months. Add some of the cooking juices before freezing to keep the meat moist.
To reheat, place the brisket with some of its juices in a covered baking dish. Warm it in a 300°F oven until heated through. Keeping the dish covered protects the sliced meat from drying out.
