- 1 tablespoon minced garlic
- 2 teaspoons Cajun seasonings
- 1 ½ teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- Fresh herbs, to garnish
- Pomegranate pearls, to garnish
- Lemon wedges, to serve
Instructions
- Preheat the oven to 400°F. Line a baking sheet with aluminum foil or grease it with oil and set aside.
- Pat the turkey breast dry with a kitchen towel.
- In a medium bowl, mix together the butter, Cajun seasoning, paprika, salt, black pepper, and thyme to form a paste.
- Spread the spice mixture under the turkey skin, then rub the remaining mixture evenly over the entire turkey breast.
- Place the turkey on the prepared baking sheet and roast for about 1 hour, or until the internal temperature reaches 165°F.
