Chicken Gyro Marinade

  • Greek Yogurt: Use plain greek yogurt.
  • Olive Oil: Or use your favorite light, neutral-flavored oil. 
  • Lemon Juice: The flavor of fresh lemon juice is superior to bottled lemon juice. 
  • White Vinegar: Substitute with apple cider vinegar if needed. 
  • Herbs and Spices: combine paprika, ground cumin, dried oregano, freshly minced garlic, salt and ground black pepper.
  • Chicken: use boneless, skinless chicken thighs. 

To assemble Gyro

  • Pita Bread
  • Tzatziki Sauce: Purchase premade or make your own. This sauce makes these sandwiches so good, so don’t skip the sauce!
  • Cherry Tomatoes: Halve cherry tomatoes or chop whole tomatoes. 
  • Onion: Thinly sliced red onion is milder in flavor and perfect for use in raw applications. 
  • Feta Cheese: Crumbled feta cheese is salty, creamy, and a great addition to this sandwich.

How To Make Chicken Gyro

How to marinate chicken for authentic chicken gyros.
  • Marinate the chicken. In a wide bowl, combine the ingredients to marinate the chicken; yogurt, olive oil, lemon juice, white vinegar, paprika, cumin, oregano, garlic, salt, and pepper. Add in the chicken thighs and coat well. Marinade the chicken thighs for at least 30 minutes.

  • Grill the chicken. Heat a grill pan or skillet on medium heat; add the chicken thighs and cook for 4-5 minutes, flip it to the other side and cook further for 3-5 minutes until the chicken is cooked through.
  • Slice the chicken. Once done, transfer the chicken to a plate and allow them to rest for 5 minutes, and then slice the chicken into strips.
  • Make the gyro. Warm the pita bread on the stovetop or microwave. Place the pita bread on a plate and spoon some chicken strips, followed by a tablespoon of tzatziki, onions, tomatoes, feta cheese, and parsley.
  • Serve. Serve the chicken gyros with lemon wedges on the sides.

  • Marinate the chicken for at least 30  minutes, but you can go as long as overnight. 
  • Use the freshest pita bread you can find. 
  • Add thinly sliced cucumber, olives, roasted red peppers or chickpeas for even more toppings. 
  • Warm the pita bread before assembling. 
  • Don’t stuff the pita. Layer the pita with ingredients, then fold it over taco or burrito style. Wrap with a bit of wax paper and secure with a toothpick to hold everything in place. 
  • Always cook chicken to a minimum temperature of 165 degrees F when checked with a meat thermometer.

Ingredients 

To cook chicken

  • ½ cup Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons white vinegar
  • 1 tablespoon paprika
  • ½ tablespoon ground cumin
  • ½ tablespoon dried oregano
  • 1 teaspoon garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • lb chicken thighs, boneless and skinless

    AMAZING!!!! Honestly, the best recipe for a Greek Gyro Wrap. I made it tonight for dinner and my family didn’t believe I cooked it myself they thought I ordered it from a restaurant. Now they’re requesting I make this twice a week. Lol….
