  • Dijon Mustard
  • Salt and Black Pepper

  • Chicken: Although any cooked chicken will work, this recipe is perfect for using rotisserie chicken cubed into bite-size bits. 
  • Apples: Use your favorite variety of apples. 
  • Grapes: I used seedless red grapes cut in half. You can also use green grapes.
  • Celery: Sliced celery adds a nice crunch to this salad. 
  • Almonds: Almonds add texture but feel free to use any nut. 
  • Green Onions: Chopped green onions offer an onion flavor without being overwhelmingly intense.
  • Parsley: Adding fresh herbs to a salad adds a bright, fresh flavor.

  • Prepare the dressing. Prepare the sauce by combining; mayonnaise, lemon juice, Dijon mustard, salt, and pepper in a small bowl. Mix until well combined, and set it aside.

  • No rotisserie chicken? Cook chicken breasts, cool and cube. 
  • Chop the apple and halve or quarter the grapes. 
  • Use low-fat mayonnaise if preferred or swap some or all of the mayo for plain Greek yogurt. 
  • Bump up the flavor even more by adding a dash of celery salt. 
  • Substitute pecans or walnuts for the almonds. 
  • Add a handful of dried raisins or dried cranberries. Just note they will add carbs and sugar. 
  • Fresh parsley brightens this salad. You can also use dill, basil, cilantro or tarragon.

Ingredients

For the dressing

  • ¾ cup mayonnaise
