Greek Chicken Ingredients
- Chicken: I used boneless skinless chicken tenderloins that I cut into 1-inch chunks.
- Lemon: You’ll need lemon juice, lemon zest, and lemon slices for this Greek chicken skewer.
- Greek Chicken Marinade: For the marinade, I use minced garlic, dry oregano and basil, onion powder, salt, pepper, olive oil, red wine vinegar, paprika, and chili flakes.
How To Make Chicken Kabobs
- Marinate the Chicken: Cube the chicken and place it in a bowl. Add in the marinade ingredients and mix well to coat with the chicken. Cover and marinate in the fridge for 30 minutes to 1 hr.
- Prepare the chicken skewers: Remove the chicken from the fridge and skew 5-6 pieces on each skewer, depending on the size of your skewers.
- Prepare the grill and grill the chicken: Preheat the grill right before you start arranging the skewers. Spray the grill with some oil and grill the chicken on each side for 4-5 minutes, or until fully cooked at 165 F, and a little charred. Transfer to a dish and serve immediately.
Tips to Make Grilled Greek Chicken
- Fresh lemon is ideal for this recipe. I would not recommend using bottled lemon juice for this as you have that fresh and bright citrus flavor.
- To make this spicier, you can add more chili flakes or even some cayenne pepper.
- If you are worried about the meat sticking to the skewer, spray them with a bit of non-stick spray before placing your ingredients onto the skewer.
- Feel free to add some vegetables to this like bell peppers, onions, cucumbers, olives, and more. You can also serve them with my Greek Orzo Salad!
- Always use a preheated grill so the chicken doesn’t stick.
- Be sure to cut everything to the same size so the chicken cooks evenly.

You can use metal or wooden skewers. I like to soak my wooden skewers for 15 to 30 minutes before using them so they don’t burn on the grill. Wooden skewers are great if you don’t grill often but if you do, you should invest in a set of reusable metal skewers.
I use chicken tenderloins but you can definitely use boneless skinless chicken breasts or thighs if you prefer.
You can make chicken skewers in the oven instead. Simply place them on a sheet pan and bake them for about 15 minutes at 400°F, flipping halfway through. You can also pan sear them as well. Always check the internal temperature of the chicken before serving. Cook time will vary based on the size of the cubes.
If you love meal prepping, then you’re in luck. These Greek chicken skewers can last for up to 4 to 5 days when stored in an airtight container. I just remove them from the skewers so they can be microwaved at work.
