This easy baked chicken recipe is a simple meal that can be thrown together using ingredients you have on hand and cooked in about 20 minutes. Baked Chicken Bites Ingredients

Ingredients needed for baked BBQ chicken bites.

For the Chicken 

  • Chicken:  Cut chicken breasts into bite-size pieces. You can also use chicken tenderloins or boneless, skinless chicken thighs. 
  • Seasonings: Combine paprika, salt, garlic powder and black pepper to season the chicken. 
  • Dredge: Coat the chicken in milk and eggs and dredge with all-purpose flour for a crispy coating. You can substitute corn starch or 1-to-1 gluten free flour if desired. 

For the BBQ Sauce

  • BBQ sauce: Select your favorite brand of barbecue sauce. 
  • Ketchup: Use regular or low sugar ketchup.
  • Honey: Honey helps to thicken and sweeten the sauce. Substitute real maple syrup if desired. 
  • Chopped Parsley: to garnish. 

How To Make BBQ Chicken Bites

  • Prepare the equipment. Preheat the oven to 400 degrees F. Line a parchment over a baking sheet and keep it aside.

  • Season the chicken. Season the chicken pieces with paprika, garlic powder, salt, and pepper. Mix it well and set it aside.

  • Dredge the chicken. In a medium bowl, place the flour, and in another bowl, whisk the eggs with milk and keep it aside. Dredge the chicken pieces first in the flour, then in the egg mixture, and then back to the flour until well coated.

  • Bake the chicken. Arrange the chicken pieces on the prepared baking sheet and bake for 18-20 minutes until the chicken is cooked through and slightly golden by flipping the chicken halfway through.

  • Prepare the sauce. Meanwhile, in a small saucepan, prepare the sauce by combining BBQ sauce, ketchup and honey. Allow the sauce to simmer for 2-3 minutes.

  • Sauce the chicken and serve. Once the chicken bites are out of the oven, place the chicken in a large bowl and pour the prepared sauce over it and toss until the sauce is evenly coated. Garnish the chicken bites with fresh parsley and serve with celery along the sides.

Tips To Make Crispy Chicken Bites in the Oven

  • Cut the chicken into similar-sized bites for even cooking. 
  • Dredge in the flour before AND after using the egg mixture. This will help to develop a nice crust. 
  • Use cornstarch or 1-to-1 flour instead of wheat flour for a gluten free option. 
  • Easily alter the flavor of this recipe by selecting a different BBQ sauce. 
  • Substitute the honey with real maple syrup. 
  • Cook the chicken to a minimum temperature of 165 degrees F when checked with a meat thermometer.

How to store and reheat BBQ chicken bites?

Leftovers can be stored in an airtight container in the fridge for up to 4 days. To reheat, sprinkle with a bit of water and cover a microwave-safe dish with a paper towel. Microwave in 30-second increments until warmed through. 

Can I freeze BBQ Chicken?

This recipe freezes really well. To freeze after cooking, cool completely and freeze in an airtight container. Thaw overnight in the fridge and reheat in the microwave. You can also season and freeze the raw chicken bites. Place them on a baking sheet and flash freeze before adding the chicken to a freezer bag. To cook from frozen, increase the cooking time to 30 minutes and make a fresh batch of BBQ sauce.

Ingredients
