Ingredients needed to make Garlic Mushroom Chicken Bites.
  • Oil: use your oil of choice.
  • Chicken thighs: you’ll need some boneless, skinless chicken thighs cut into cubes.
  • Seasoning: I used paprika, Italian seasoning, garlic powder, salt, and black pepper.
  • Butter: use unsalted butter since we are already adding salt to the recipe.
  • Garlic: minced fresh garlic, not powdered.
  • Mushrooms: use any type you like. I use white mushrooms.
  • Peppers: I use green bell peppers and red bell peppers.
  • Parsley: to garnish 

How To Make Garlic Mushroom Chicken Bites

  • Cook the chicken: Heat a medium skillet with oil, add the chicken cubes and cook for 1-2 minutes. Add the mushrooms and continue cooking for a couple more minutes until golden in color and tender.

  • Add in the seasonings: Add paprika, Italian seasonings, garlic powder, pepper, and salt to the chicken. Mix it, transfer the chicken pieces to a plate.

  • Cook the vegetables: To the same skillet add the butter. Once the butter has melted, add the garlic and bell peppers. Sauté for 2-3 minutes.

  • Combine everything: Stir the chicken back into the skillet along with the chicken juice released while resting the chicken. Cook for 4-5 minutes until the chicken is cooked through and no more moisture is left in the pan. Garnish the mushroom chicken bites with fresh parsley and serve.

Tips and Notes to make the Best Garlic Butter Chicken Recipe

  • Feel free to add other veggies if you like. Some recommendations are zucchini, carrots, broccoli, cauliflower, onions, peas, and green beans.
  • Cremini mushrooms can be used in place of white mushrooms.
  • If your mushrooms have dirt on them, simply give them a brush. Avoid washing and soaking mushrooms as they’ll get waterlogged. 
  • Cut your chicken thighs into similar-sized pieces so that they cook evenly.
  • Cook the chicken in a single layer and don’t overcrowd the pan. Cook in two batches to prevent boiling.

You can use whatever chicken you have to hand, but be aware you might have to slightly adjust the cooking time. Chicken breasts and chicken thighs work well with this recipe as well. Just be sure to cut them evenly. 

How do I know the chicken thighs are cooked through?

The best way to know when your chicken is done is to use a meat thermometer. Simply insert the thermometer into the thickest part of the chicken, when it reads 165F it’s done.

How do I store leftovers?

Leftovers can be stored for up to 3 days in an airtight container in the fridge. Be sure to let the chicken cool to room temperature before storing it as it will get soggy from condensation if it’s still warm.

What can I serve with Garlic Mushroom Chicken Bites?

These chicken bites are great with rice, quinoa, salad, mashed potatoes, or even some noodles. They are very versatile and goes with pretty much everything. 

Are cremini mushroom same as white mushroom?

Cremini mushrooms are simply the brown version of the common white cultivated mushroom. You can also think of them as older than the white mushroom. The smaller, white button mushroom is the youngest variety, and the larger, Portobello mushrooms are older. 

Can I use Portobello Mushroom instead of cremini mushroom?

Absolutely. Although, the flavor of the Portobello mushroom will be bolder than the cremini mushroom.

  • 2 tbsps. olive oil, divided
  • 1 lb boneless skinless chicken thighs, cubed
  • ½ tsp paprika

  • 1 tsp garlic powder
  • ½ tsp ground black pepper
  • ½ tsp salt
  • 2 tbsp unsalted butter
  • 1 tbsp minced garlic
