These Mini Pancake Cereal are the best pancake breakfast ever! They are made just like regular pancakes and can be made into different flavors your family will love!

Because they gained so much popularity on social media I decided to give it a try just like the Dalgona Whipped Coffee I made not too long ago. The feedback from my kids? Amazing!

Why this recipe is great

This recipe is super delicious and can be adapted in so many ways. Not only do little ones love this recipe but even adults enjoy them too. You can easily make any flavor you like and serve them with pancake syrup, chocolate or strawberry syrup, milk, whatever your heart desires.

What is pancake cereal

Pancake cereal are basically pancakes made into mini pancakes the size of cereal. Pancake cereal gained it’s popularity on Tik Tok over the quarantine period and has become so many people’s favorite was to have pancakes! People have made literally everything into a pancake cereal form and I have to admit some of the ideas are brilliant!

Ways to eat the mini pancake cereal

Mini pancake cereals can be eaten in many ways. A spoon if you are eating it the same way you would eat cereal with milk or with a fork, which is mostly when you use with pancake syrup.

The real question is, how do you prefer to eat it?

Milk vs. Syrups

I personally preferred eating the pancake cereal with syrup. I tried them with milk, but it wasn’t my thing. My kids also preferred without milk because as you know kids eat slower, and the milk soaks up the pancakes super fast and they become mushy.

With syrup, the pancakes stay crisp and intact and it allows you to enjoy with different flavored syrups and toppings, without having to drown them with anything. Plus I love picking up like 10 mini pancakes with my fork in one bite 😉

How to make pancake cereal

You can either use boxed pancake mixes or do your own from scratch. It’s ingredients you have at home, so you don’t have to go out and buy anything to be honest. I will be showing you 3 easy ways to make 3 flavors your family will love.

Ingredients you will need:

First we will start with the classic pancake recipe to make normal mini pancakes.

Add all the dry pancake ingredients in bowl. In another bowl, whisk up the liquid ingredients and then pour that over the wet ingredients and which really well to get rid of any tiny lumps.

Transfer some of the batter into a squeezable bottle, which is usually used for condiements. You want to cut the tip to make the hole a little bigger. Also you want to only fill it 90% of the way because the batter will rise if you don’t use it right away and overflow.

NOTE: You can use a ziplock bag or like those baking pipping bags if you don’t have the bottle. Just be sure to cup the hole very small.

Bring a non-stick griddle on pan to medium heat. I used a crepe pan. Spray the griddle or pan and then wipe some of the oil or butter spray off with a tissue. I prefer using oil spray.

Squeeze out small amounts of pancake batter out on the pan to create the mini pancakes. Cook until bubbles form on the top and the batter has almost dried out, then flip them all together with your spatula and cook a little bit more maybe for about 30 seconds-1 minute. You don’t have to flip one at a time, that’s too time consuming.

Remove and place them on a bowl and add some butter if you like right away so that it melts up and drizzle some pancake syrup on top. You can add some fresh fruits to the bowl as well. My kids love strawberries with pancakes.

If you are serving with milk, then you will add milk instead of pancake syrup.

How to make mini chocolate pancake cereal

You will start with the same concept of making the pancake batter just like you would for the regular pancakes.

I used Nesquik chocolate powdered milk to flavor it up and because it doesn’t come out dark enough, I add a little bit of sweetened cocoa powder to make the color darker.

You want to add a few tablespoons of water to the batter to prevent the it from getting too thick.

Cook the same way you I mentioned above and serve along with some chocolate syrup, chocolate chips, fruits, whatever your heart desires.

How to make mini strawberry pancake cereal

Same as the chocolate, you want to add the strawberry flavored Nesquik milk and a few tablespoons of water.

In order for you to get a nice pink color for this flavor, you will need a few drops of natural red food coloring. If you skip this step, the color will not be as pink as you want to but the strawberry flavor will still be the same.

My kinds enjoyed this flavor more with fresh strawberries and sprinkles along with a little drizzle of pancake syrup. They were not a fan of strawberry syrup but my kids are a little picky.

Everyone’s state buds are different, so experiement with toppings your kids will like.

Other mini pancake flavors

  • Banana
  • Cinnamon sugar
  • Carrot cake
  • Oreo
  • Funfetti
  • Chocolate chip
  • Birthday cake

These are just a few examples and the options are endless. Throw in your favorite toppings and have fun with it!

Tips for making the mini pancakes

  • Cook the batter right when you mix it. If you wait too long, the batter will rise, deflate and loose it’s fluff.
  • Place in zip lock freezer bags and freeze to store for later. Reheat in the oven for a few minutes until warm.
  • Add a little extra water always after adding the flavored powdered milk.
  • Use oil spray instead of butter spray and be sure to wipe it down a little afterwards because some butter sprays become brown with heat and ruins the color of the pancakes.
  • Use non-stick pans only
  • Wait until the pancakes dry on the top before flipping them to prevent them from sticking to each other.
  • Add natural food coloring to enhance the color.
  • Cut a small hole for the bag or the bottle to keep pancake mini size.
  • If you are having it with milk, be sure not to let it sit for too long or else pancakes will become soggy.
  • If you want to serve all the pancakes together at once , keep them in a warm oven (not while the heat is on, preheat the oven) wrapped with towel, until you finish the rest of the batch.

Mini Pancake Cereal (3 Flavors)

Classic pancakes made into mini pancakes to make pancake cereal! This viral recipe gained it popularity on social media and there is a good reason why!

Ingredients 

  • 1 ½ cup all purpose flour
  • 1 ½ cup milk or butter milk
  • ¼ cup butter, melted
  • 1 tbsp baking pwder
  • ½ tsp baking soda
  • 1 large egg
  • 1 tbsp vanilla extract
  • 2 tbsps sugar
  • ¼ tsp salt

Chocolate Pancakes

  • ¼ cup chocolate nesquik
  • 1 tbsp sweentened cocoa powder
  • extra water, Add 1 tbsp at a time to get the right consistency

Strawberry Pancakes

  • ¼ cup strawberry nesquick
  • 2-3 drops food coloring, eyeball it to the color your want
  • extra water, Add 1 tbsp at a time to get the right consistency

Instructions 

  • Mix the dry ingredients together in one bowl and the wet ingredients in another.
  • If you are making different flavors, split up the batter according and flavor with ingredients listet. If you are making only one kind of flavor, follow the ingredient measurements on the recipe card and mix together well.
  • Transfer the batter to a squeezable bottle or ziplock bag and make a small hole to pipe put the batter.
  • Heat a non-stick skillet to medium heat, spray with oil spray and then lightly rub off some of the oil with a papper towel.
  • Squeeze the batter onto the pan in mini sizes and cook until the batter dries out on the top them flip them around with a flat spatula and allow to cook for another 30 seconds to 1 minute.
  • Repreat for the remainder of the batter, re-greasing the pan as needed.
  • Serve with pancake syrup, maple syrup, or any syrup of your choice. Garnish with whatever toppings you like or add some of your favorite fresh fruits.
