The chicken breasts are perfectly moist and juicy and are covered in mozzarella cheese with a layer of sauteed mushrooms. This effortless chicken dish is a great dinner for any night of the week.

  • It’s so flavorful. The melted cheese combined with the chicken and mushroom is absolutely delicious. All you need are a few simple ingredients to turn plain chicken breasts into a tasty dinner!

Mushroom Chicken Bake Ingredients

Ingredients needed for cheesy baked chicken breasts with mushrooms.
  • Chicken breasts: I use skinless and boneless chicken breasts.
  • Seasoning: I use garlic powder, Italian seasonings, salt, and pepper to season the chicken.
  • Olive oil: you can also use another neutral oil of your choice.
  • Unsalted butter: since we season the chicken with salt, I recommend using unsalted butter. 
  • Onion: I use a yellow onion but any onion can be used.
  • Garlic: freshly minced garlic is preferred over pre-minced garlic.
  • Mushrooms: feel free to use brown or white mushrooms.
  • Chicken broth: use low sodium whenever possible. 
  • Mozzarella cheese: shredding your own cheese is preferred as store-bought cheese has a coating on it that doesn’t let the cheese melt as evenly. 
  • Chopped parsley: to garnish.

How To Make Chicken Breast with Mushrooms

  • Preheat: Preheat the oven to 375 degrees F.
  • Season the chicken: Season the chicken breasts with garlic powder, Italian seasonings, salt, and pepper.

  • Sear the chicken: Heat a large skillet with oil on a medium flame, add the chicken breasts and cook for 7-8 minutes until they turn golden. Transfer them to a plate and set them aside.

  • Cook the mushrooms: To the same skillet add the butter. Once the butter is melted add in the yellow onion, garlic, and mushrooms. Cook for 5-7 minutes until the mushroom starts releasing the moisture.

  • Layer the mushrooms: Add the half portion of the sauteed mushroom mixture to a baking dish or a casserole dish and spread evenly.
  • Add the chicken: Add the chicken breasts over the mushroom mixture.

  • Simmer the rest of the mushrooms: To the remaining half of the mushroom mixture add the chicken broth and allow them to simmer for 2 minutes. 
  • Mushrooms added on top of chicken breasts.
  • Shredded cheese added on top of chicken and mushrooms.
  • Top the chicken breasts: top with the remaining mushroom mixture and pour the liquid on top. Add cheese over the chicken breast and bake for 15-20 minutes until the chicken is cooked through.
  • Garnish and serve: Once done garnish the dish with chopped fresh parsley and serve.

Tips to Make Baked Chicken with Mushrooms

  • You can check the doneness of the chicken by using a meat thermometer. Stick the thermometer into the thickest part of the chicken, if it reads 160 F then it’s ready.
  • You are welcome to swap your boneless skinless chicken breasts for boneless chicken thighs. Cook time will have to be adjusted if you use a different cut of meat.
  • Make sure the oven is fully heated before adding the dish into the oven. This prevents uneven baking.
  • To save time, you can buy your mushrooms pre-sliced.
  • Try to slice your mushrooms as evenly as possible so they cook evenly. Same with the chicken, try to buy chicken breasts that are similar in size so they cook evenly.
  • Feel free to add additional vegetables to this before baking in the oven! Just make sure to sauté them first so the moisture content of the vegetables do not affect the bake.

Do I cover baked chicken with foil?

You don’t have to cover this dish with foil. Since the chicken is partly cooked beforehand, the chicken isn’t spending a ton of time in the oven. Plus the cheese and mushrooms on top help keep the chicken from drying out.

What to serve with chicken and mushroom recipe?

Try serving this baked chicken recipe with quinoa, rice, green beans, roasted potatoes, Brussels sprouts, asparagus, broccoli, or pasta! It’s a very recipe versatile so it goes with almost any side dish! 

Can I use a different cheese?

For sure! If you’re not a fan of mozzarella in this smothered cheesy baked chicken with mushrooms, try cheddar, Havarti, gruyere, gouda, Monterey jack, or provolone. You can even do a mix of different cheeses if you want to clear out the fridge! 

How long does it take to bake chicken?

Since this recipe involves searing the chicken beforehand, it only takes 15 to 20 minutes to finish off in the oven. However, keep in mind that the baking time depends on the thickness of your chicken breasts.

How do I store leftover chicken?

Place leftover baked chicken and mushrooms in an airtight container in the fridge for up to 3 days. To reheat, you can heat it up in the oven or microwave.

Ingredients

  • 4 whole chicken breasts skinless and boneless
  • 1 tsp garlic powder
  • 1 tsp Italian seasonings
  • ½ tsp salt
  • ½ tsp ground pepper
