- It’s easy! Apart from cooking the eggs, it takes minutes to put this avocado toast together.
- It’s good for you. If you haven’t heard about all the wonders of avocado, then I’m here to share with you! Avocados are extremely nutrient dense as they have nearly 20 different vitamins and minerals.
- It’s customizable. You can make this as simple or as fancy as you want. Pretty much everything goes well with avocado toast. I’ll have some suggestions down below on how you can customize avocado toast.
Avocado Toast Ingredients
- Bread — to be toasted. Any kind you prefer. Thick cuts taste so much better because they stay soft on the inside and crunchy on the outside.
- Avocados — we love Hass avocados to make avocado toast with.
- Lemon– a tiny squeeze for the avocados.
- Salt — we like flakey salts for avocado toast.
- Red Pepper Flakes– add a kick of spice.
- Eggs- Cooked the way you prefer to serve it.
- Black pepper- fresh cracked black pepper is the best on avocado toast.
How to Make Avocado Toast With Egg
To start you need to make the base of the toast, which is everything before the eggs.
- Toast your bread in the toaster or oven.
- Cut the avocados open and remove the seed.
- Scoop out the avocados into a bowl, add in a splash of lemon juice, a pinch of salt, and red pepper flakes.
- Smash your avocado with a fork to the texture you like. Leave it chunky or smash it until smooth.
- Spread it onto your toasted bread.
Avocado Toast Ideas
To finish off the avocado toast, you need to decide how you want to cook your eggs. My 3 favorite ways are scrambled, poached and fried.
Avocado Toast With Scrambled Eggs
- In a non stick skillet, melt 1-2 teaspoons of butter over low heat. In a bowl, crack an egg and whisk it well. Add some salt and pepper to taste. Pour in the whisked eggs into the skillet.
- As it sets, move the egg with your spatula from side to side to form large, soft curds. Cook until full cooked, but not dry.
- Top your avocado toast with the egg and sprinkle some pepper flakes, spices or topping of your choice.
Avocado Toast with Fried Eggs
- Heat a small non-stick skillet over medium heat. Melt some butter or add oil. Once it’s heated, carefully pour an egg into the pan, add salt and let it cook until the whites are completely set but the yolks are still soft to make a sunny side up egg.
- Carefully place the egg on top of your avocado toast and top with seasonings of your choice.
Poached Egg Avocado Toast

- Top the avocado toast with the poached egg and sprinkle some pepper flakes and black pepper on top.
How to Pick and Store Avocados
- To pick an avocado, gently squeeze them. A ripe avocado is firm but has a bit of soften to it. If the avocado is too firm, leave it on your countertop to ripen.
- Another way to pick avocado is to check under the stem. Remove the stem at the top of the avocado gently. When you remove it, if it’s green underneath, the avocado is ready to eat. If it’s brown underneath, the avocado is overripe.
- Avoid avocados that are overly soft or if the skin has blemishes as it means it’s over ripened and is not ideal for avocado toast.
- When bringing avocados home, store unripe avocados on the counter, out of direct sunlight. Once ripened, enjoy immediately or store it in the fridge.
Tips to make the Best Avocado Toast
- Use thick and sturdy bread to prevent the toast from falling apart.
- Use firm but ripe avocados.
- Add in flavors to your avocado, like garlic, lime or lemon juice, chili pepper, spices etc.
- Add other toppings like jalapeño, sliced onions, smoked salmon, tomatoes etc.
- Eat your avocado toast right after you assemble it. It will get soggy and unpleasant when left uneaten for too long.

Avocado toast is a better meal option when eaten in moderation. However, avocados are high in fat and calories. The best portion of avocado would be about half an avocado a day and not more.
Avocadoes and toast go well with so many things. My most favorite combos with avocado is eggs, smoked salmon, crumbled feta cheese, honey, tomatoes, herbs and spices like black pepper and everything but the bagel seasoning.
You can use any bread. But you want something thick and sturdy. Especially if you add extra toppings, you want something that can hold some weight without it falling apart.
To speed up ripening the avocado you can place unripe avocados in a brown paper bag (like the brown lunch bags) with an apple and seal it. The apple releases ethene gas to help speed up the ripening process.
Avocado is best kept simple to enjoy the rich creamy flavor. The only seasonings I like using when making avocado toast are black pepper, chili flakes, salt and everything but the bagel seasoning.

- Everything bagel seasoning
- Mix in minced garlic into the avocado
- Smoked salmon

- Feta or ricotta cheese with chives or green onions on top
- Sauteed mushrooms
- Caramelized onions

Avocado Toast with Egg- 3 Ways
Ingredients
- 1 slice multi grain bread, or bread of your choice
- ½ whole Avocados, mashed
- Lemon juice, to taste, in avocado
- Salt and Pepper, to taste
- Red Pepper Flakes, to taste
Fried Egg
- 1 whole egg
- 2 tsps. butter
Poached Egg
- 1 whole egg
- 1 tsp. vinegar, to add in the water when you cook it
Scrambled Egg
- 1 whole egg
- 2 tsps. butter
Instructions
- Toast your bread in the toaster or oven.
- Cut the avocados open and remove the seed.
- Scoop out the avocados into a bowl, add in a splash of lemon juice, a pinch of salt, and red pepper flakes.
- Smash your avocado with a fork to the texture you like. Leave it chunky or smash it until smooth.
- Spread it onto your toasted bread.
- Top with cooked eggs (see blog post). Garnish and enjoy.
Notes
- Use thick and sturdy bread to prevent the toast from falling apart.
- Use ripe avocados. To check if an avocado is ripe, remove the stem on top gently. If it comes out easily and the stem color is green, your avocado is ripe enough. If it’s brown, it’s too ripe. It the stem doesn’t come out easily, it’s still raw.
- Add in flavors to your avocado, like garlic, lime or lemon juice, chili pepper, spices etc.
- Add other toppings like jalapeño, sliced onions, smoked salmon, tomatoes etc.
- Eat your avocado toast right after you assemble it. It will get soggy and unpleasant when left uneaten for too long.
Perfect with scrambled egg on French bread. At the very end, add a tiny bit of Chinese red pepper, and a few green slices of Chinese finger pepper, and then top it off with Greek sea salt. Delicious.
