I love summer and all the delicious salads that come with it. This Avocado Corn Salad is a super simple corn salad recipe with added avocados! It’s super filling and fresh.

Avocado Corn Salad is such an awesome summer salad! The perfect side dish with anything you’re grilling, you can even double up the portion and have it as a main dish.

Ingredients you’ll need

  • Vegetables: Sweet corn, grape tomatoes, onion.
  • Avocados
  • Cilantro
  • Dried Cranberries
  • Salad Dressing: Lemon juice, olive oil, salt, minced garlic.

How to make this Avocado Corn Salad

  • Boil the corn for 5-7 minutes and then allow to cool. Cut off the corns flesh with a knife or corn slicer tool.
  • Cut the avocado into large cutes, tomatoes into halves, thinly slice the onions and chop the cilantro.
  • Place everything in a bowl and add in the dried cranberries.
  • Prepare the dressing my mixing the salad ingredient together. Pour over the salad ingredient and toss to coat everything well.
  • Serve and enjoy!

  • Grill the corn for a smoky flavor.
  • Feel free to add other fresh herbs such as basil or chives.
  • If you want a more complete meal, grill some chicken and shrimp and toss it together for a main dish.
  • Add avocado to the salad last so that it doesn’t get completely mashed while mixing.
  • To make this keto and low-carb, omit the corn and double the other ingredients.

What’s the best corn for this salad?

One of the main key ingredient for this recipe is corn. It’s important to choose a type of corn that’s sweet. I always get the peaches and cream corn from the grocery store because I find it to be the sweetest. Sometimes they sell them with the skin and sometimes you find them peeled. But it’s cheaper if you buy it with the skin and peel it at home.

It only take a few minutes and you can sure get more corn for the dollar. For this recipe I peel and boil the corn cobs for about 5-7 minutes.  Then I cut the corn flesh off with a knife or you can you the corn cutter tool.

How do I know if an avocado is ripe?

A main ingredient is the avocado. Grab ripe but firm avocados from the store. If the avocado yields to firm gentle pressure you know it’s ripe and ready-to-eat. Ripe, ready to eat avocados may have a darker color but color can vary so it is best to go by feel as well as color. It will feel lightly soft but it will not feel “mushy” to the touch.

I don’t like soft avocados with salad recipe. It mashes up and makes the salads look ugly. This way it looks cleaner and still tastes good.

Can I make this avocado corn salad ahead of time?

I don’t making the whole avocado corn salad completely ahead of time. Leave out the avocado until right before preparing so they do not discolor in the fridge. There are a few things you can do to save time and make it ahead though.

Your corn can be cooked ahead of time and stored in an air-tight container in the refrigerator until you’re ready to make a salad. 

You can also prepare most of the salad ahead time. Prepare corn and mix it with the other salad ingredients, just remember, the avocado goes in just before serving!

This Avocado Corn Salad is a super delicious and simple summer salad! It’s a typical corn salad with added avocados and sweet cranberries.

Ingredients 

  • 3 whole corn cobs
  • 2 large avocados

  • 1/4 small purple onion
  • 2 tbsps. chopped cilantro

SALAD DRESSING:

    All I can say is “yummmm”. I made this while I had guests over for dinner and everyone wanted the recipe. It was a hit!

    Absolutely delicious! I forgot to add the garlic to the dressing and it was still great. Added mozzarella cheese hunks instead of cranberries and this was a real hit. Will be making again for sure!
    Very popular at a pot luck.

    I tried this and sub’d the lemon juice for one fresh lime and added feta (didn’t love it with feta). I didn’t add the oil but it was delicious. We ate our with party crackers. So yum!!

    Side note: the serving size says 1g. Should it be 1 cup??

      Glad you enjoyed the recipe. I am sorry about the serving. They didn’t transfer over right to my new recipe card. I am working on fixing them when someone points it out because they are random. Glad you mentioned it. I will adjust it. It’s per serving. This salad serves about 4 small servings as a side dish. It all depends on how much you serve.

  4. I haven’t tried this salad yet want to make it today. I don’t have Avocados or cranberries. Could I use Raisins add fresh Strawberries to it. I also have Zucchini could that be added in. I have corn and the onion, oil. I just eating healthier because I have Congested Heart Failure I have make my grocery list and menu.

      Sorry for the late reply. I haven’t tried it like that yet, but I would say alter it to whatever items you feel is best for your health. I add cranberries for their tart flavor and sweetness. You can definitely try with raisins too.
