I love summer and all the delicious salads that come with it. This Avocado Corn Salad is a super simple corn salad recipe with added avocados! It’s super filling and fresh.
HOW TO MAKE THE AVOCADO CORN SALAD:
One of the main key ingredient for this recipe is corn. It’s important to choose a type of corn that’s sweet. I always get the peaches and cream corn from the grocery store because I find it to be the sweetest. Sometimes they sell them with the skin and sometimes you find them peeled. But it’s cheaper if you buy it with the skin and peel it at home. It only take a few minutes and you can sure get more corn for the dollar. For this recipe I peel and boil the corn cobs for about 5-7 minutes. Then I cut the corn flesh off with a knife or you can you the corn cutter tool.
PUTTING TOGETHER THE AVOCADO CORN SALAD:
Next, prepare the other ingredients you will need. Another main ingredient is the avocado. Grab ripe but firm avocadoes from the store. I don’t like soft avocadoes with salad recipe. It mashes up and makes the salads look ugly. This way it looks cleaner and still tastes good. We will also need some grape or cherry tomatoes, cut in halves. I added some purple onions, which you can take out if you don’t like onions. Idealy, I add in some fresh cilantro as well. If you don’t have kids, you can add some finely chopped jalapenos. Adding cranberries is also optional, but I love the cranberry flavor in this recipe. It adds some sweetness to the salad.
Prepare the salad dressing and add into the salad bowl and toss gently. I love using just a basic lemon and olive oil dressing for this recipe to keep it simple. I also add some garlic into the dressing but that is also completely optional. Serve the salad right after adding the marinade. If you would like to prepare ahead, leave out the avocado until right before preparing so they do not discolor in the fridge. - 3 corn cobs
- 2 large avocados
- 1 cup grape tomatoes, cut in half
- 1/4 of a small purple onion
- 2 tbsps. chopped cilantro
- 1/2 cup dried cranberries
- Juice of 1 lemon
- 2 tbsps. olive oil
- 3/4 tsp. salt
- 1 tsp. minced garlic
- Boil the corn for 5-7 minutes and then allow to cool. Cut off the corns flesh with a knife or corn slicer tool.
- Cut the avocado into large cutes, tomatoes into halves, thinly slice the onions and chop the cilantro.
- Place everything in a bowl and add in the dried cranberries.
- Prepare the dressing my mixing the salad ingredient together. Pour over the salad ingredient and toss to coat everything well.
