Garlic Butter Chicken Bites combine juicy chicken thighs, mushrooms, bell peppers, fresh garlic, butter, and simple spices in a one-skillet meal that’s ready in 30 minutes.

Garlic butter mushroom chicken is a simple skillet meal with bite-sized chicken, mushrooms, and bell peppers in a garlic butter sauce. It works well for weeknight dinners and can be served with rice, potatoes, noodles, or vegetables.

For another simple weeknight meal, my Mongolian Chicken has a savory-sweet sauce, while Caprese Chicken combines chicken with classic Italian flavors.

Why This Garlic Chicken and Mushroom recipe is a favorite of mine

  • Ready in 30 minutes. A short prep and cook time makes it practical when you need dinner on the table without a long wait.
  • One-skillet meal. The chicken, mushrooms, and peppers cook in the same pan, which means fewer dishes to clean after dinner.
  • Good for leftovers. Extra chicken bites make a convenient lunch or quick meal the next day.

Ingredients You’ll Need

Chicken thighs, mushrooms, bell peppers, garlic, butter, oil, and seasonings.
  • Chicken thighs: Boneless, skinless chicken thighs stay juicy and tender when cooked as bite-sized pieces.
  • Mushrooms: Cremini mushrooms add an earthy, savory taste and a meaty texture to the chicken bites.
  • Bell peppers: Red and green bell peppers add mild sweetness, color, and texture.
  • Olive oil: Helps the chicken brown as it cooks.
  • Butter: Unsalted butter adds richness and pairs well with the chicken and vegetables.
  • Garlic: Fresh minced garlic becomes fragrant as it cooks in the butter.
  • Seasonings: Paprika, Italian seasoning, garlic powder, salt, and black pepper season the chicken.
  • Parsley: Fresh parsley adds color and freshness before serving.

Step 5: Garnish and serve. Garnish the mushroom chicken bites with fresh parsley and serve.

Ways to Switch It Up

Use chicken breast: Swap the chicken thighs for boneless, skinless chicken breast. Cut it into similar-sized pieces and adjust the cooking time as needed.

Try different mushrooms: Use white button or Portobello mushrooms instead of cremini mushrooms. Portobello mushrooms have a deeper mushroom taste.

Include other vegetables: Zucchini, broccoli, green beans, or onions can complement the mushrooms and bell peppers. Adjust the cooking time based on the vegetables you choose.

Spicy Garlic Butter Chicken Bites: Add red pepper flakes with the seasonings if you prefer a spicier version of the garlic butter chicken bites.

Tips To Make This Garlic Mushroom Chicken Bites Recipe

  • Cut the chicken into similar-sized pieces. Pieces that are close in size cook at a similar rate and help prevent smaller pieces from drying out before larger pieces finish cooking.
  • Clean the mushrooms before slicing. Remove visible dirt and pat the mushrooms dry before cooking. Excess surface moisture can release more liquid into the skillet and make the dish watery.
  • Allow excess moisture to evaporate. Mushrooms release moisture as they cook. Let the excess liquid cook off so the chicken and mushrooms are not watery when served.
  • Use a meat thermometer. Check one of the largest chicken pieces with a meat thermometer. The chicken should reach an internal temperature of 165°F for safe serving.
