  • Rolled Oats: You can use regular or quick cooking oat. Quick oats will have a more delicate texture. If you are gluten free, be sure to look for certified gluten free oats.  
  • Almond Flour: almond flour has a nutty flavor and texture, but you can substitute whole wheat or regular flour, too.
  • Banana: mash a large ripe banana. Mashed bananas can be stored in the freezer. 
  • Peanut Butter: use your favorite peanut butter, almond or cashew butter. You can use unsweetened varieties if preferred.
  • Coconut Oil: this oil is solid at room temperature, so you will want to melt and cool it. 
  • Maple Syrup: adds a touch of sweetness. You can also use raw honey. 
  • Leavening: both baking powder and baking soda are added for texture and lift. 
  • Vanilla Extract: vanilla enhances the flavor of all the other ingredients. 
  • Salt: just a pinch. 
  • Strawberries: use frozen or fresh sliced strawberries.
  • Turbinado Sugar: an optional garnish to sprinkle on top.

How To Make Oatmeal Breakfast Bars

  • Prepare the equipment. Preheat the oven to 350F. Line 8X8-inch square baking pan with parchment paper.

  • Combine the dry ingredients. In a large bowl, mix together oats, flour, baking powder, baking soda, and salt. 
  • Combine the wet ingredients. In a separate bowl, place coconut oil, mashed banana, maple syrup, peanut butter, and vanilla. Mix to incorporate.

  • Prepare the batter and add the strawberries. Pour combined wet ingredients into the bowl with dry ingredients and incorporate them all nicely with a spatula. Add strawberries and gently fold them in with a spatula. Don’t mash them too much.

Ingredients 

  • 2 cups rolled oats, for fine texture inside use quick-cooking oats
  • 1 cup almond flour, can use wheat or regular flour too
  • 1 large mashed ripe banana
  • ½ cup creamy peanut butter, can use almond or cashew butter
  • ¼ cup coconut oil, melted and cooled, not hot
  • ¼ cup maple syrup
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • 1 tsp vanilla extract
  • pinch of salt
  • cup cut strawberries, frozen or fresh
  • 2-3 tbs turbinado sugar, to sprinkle on top, optional
