Strawberry Oatmeal Breakfast Bars
Strawberry Oatmeal Breakfast Bars are loaded with heart-healthy oats, made with fresh or frozen strawberries and contain no refined sugar. These gluten free oatmeal bars can be served warm or cold and make a delicious dessert or serve as oatmeal breakfast bars.

- 2 cups rolled oats for fine texture inside use quick-cooking oats
- 1 cup almond flour can use wheat or regular flour too
- 1 large mashed ripe banana
- ½ cup creamy peanut butter can use almond or cashew butter
- ¼ cup coconut oil melted and cooled, not hot
- ¼ cup maple syrup
- ¼ tsp baking powder
- ¼ tsp baking soda
- 1 tsp vanilla extract
- pinch of salt
- 1½ cup cut strawberries frozen or fresh
- 2-3 tbs turbinado sugar to sprinkle on top, optional
Preheat the oven to 350F.
Line 8X8-inch square baking pan with parchment paper.
In a large bowl, mix together oats, flour, baking powder, baking soda, and salt.
In a separate bowl, place coconut oil, mashed banana, maple syrup, peanut butter, and vanilla. Mix to incorporate.
Pour combined wet ingredients into the bowl with dry ingredients and incorporate them all nicely with a spatula.
Add strawberries and gently fold them in with a spatula. Don’t mash them too much.
Transfer the batter to the baking dish.
Press down the top with a spatula, making sure the corners are as equally filled.
Sprinkle with turbinado sugar.
Bake for about 20-25 minutes or until golden brown.
- Measure your ingredients as accurately as possible. Spoon and level rather than scooping dry ingredients.
- Not all oats are gluten free. Be sure to purchase certified gluten free oats if that is a concern for you.
- Stir in chopped nuts for even more goodness.
- Have a sweet tooth? Add a handful or two of chocolate chips.
- Line the pan with parchment paper for easy removal.
- Let the bars cool for at least 10 minutes before cutting them into 12 squares.
- Don’t overbake or the bars will be hard.
