  • Instant Yeast: Yeast is needed for the dough to rise. Make sure the yeast is fresh or it may not work well. 
  • Baking Powder: Adds lift to the dough. 
  • Oil: Use any light neutral oil.
  • Yogurt: Whole fat yogurt such as plain greek yogurt add moisture and creaminess. 
  • Milk: Add lukewarm whole milk to bring the dough together

  • Basil Pesto: Adds a burst of fresh basil flavor to the pizza. If you’re not a fan of pesto, you can swap it for olive oil or marinara sauce.

  • Quartered Artichokes: Adds a unique texture and tangy flavor. Use roasted red peppers or sun-dried tomatoes in place or in addition to artichokes if preferred.

How To Make Mediterranean Pizza

How to make pizza dough.
  • Prepare the dough mixture. Mix the dry ingredients in a mixing bowl and the wet ingredients in another. Then add in the wet into the dry and mix with an electric stand mixer to combine well using a flour dough hook for 2-4 minutes on low speed.

  • Knead and let rise. Remove the dough from the bowl and sprinkle some flour on a cutting board. Knead the dough a little with your hands and then from a nice ball shape. Spray the bowl with some oil spray and return the dough back to the bowl. Cover and let the dough rest for 1 hour.
  • Shape the dough. When the dough rises double its size, punch it and release the air from it. Remove the dough again from the bowl and transfer to a cutting board. Sprinkle with some flour and knead to shape it again into a ball shape. Cover with a kitchen towel or saran wrap and let them rest for 10 more minutes.

For the Pizza

  • Prepare the equipment. Preheat the oven to 450 degrees F (230 degrees C) with the pizza stone inside to allow it to heat up.
  • Prepare the dough. Roll out the pizza dough to about a 12-inch size using a rolling pin, ensuring it is evenly thin.

  • Add the pesto. Spread the pesto sauce evenly in the center of the pizza dough, leaving a small border around the edges.
  • Top the pizza. Sprinkle about 1 cup of mozzarella cheese over the pesto sauce, covering it evenly. Top the pizza with artichokes, spinach, tomatoes, olives, and crumbled feta cheese, distributing them evenly over the pizza. Spread the remaining mozzarella cheese over the toppings.
  • Season the pizza. Sprinkle Italian seasonings and crushed red pepper flakes over the toppings for added flavor.
  • Transfer and bake. Gently transfer the prepared pizza onto the preheated pizza stone in the oven. Bake the pizza for 15-17 minutes, or until the cheeses are melted, bubbling, and the edges are golden brown.
  • Cool and serve. Once done, remove the pizza from the oven and allow it to cool for about 5 minutes. Slice the pizza into desired portions and serve.

Ingredients 

For Pizza Dough

  • ½ cups All purpose flour sifted
  • 2 ¼ teaspoons sugar
  • teaspoon salt
  • 1 tablespoon instant yeast
  • ¾ teaspoon baking powder
  • 1 ½ tablespoons canola or vegetable oil
  • ¼ cup whole fat yogurt
  • ½ cup milk whole milk, lukewarm
  • oil spray

For Pizza

  • 1 portion of pizza dough, the recipe I followed can create 2 pizzas about 12 inch size
  • 2 tablespoons basil pesto
  • 1 ½ cup mozzarella cheese, shredded
  • 1 cup quartered artichokes, liquid drained
  • 1 cup baby spinach
  • cup cherry tomatoes, halved
  • cup kalamata olives, sliced
  • ½ cup red onion, sliced
  • ½ cup crumbled feta cheese
  • 1 teaspoon Italian seasonings
  • ½ teaspoon crushed red pepper flakes

Instructions 

For Pizza Dough

  • Mix the dry ingredients in a mixing bowl and the wet ingredients in another. Then add in the wet into the dry and mix with an electric stand mixer to combine well using a flour dough hook for 2-4 minutes on low speed.
  • Remove the dough from the bowl and sprinkle some flour on a cutting board. Knead the dough a little with your hands and then from a nice ball shape. Spray the bowl with some oil spray and return the dough back to the bowl. Cover and let the dough rest for 1 hour.
