  • Boule loaf bread
  • Brie
  • Cranberry Sauce
  • Olive Oil or Melted Butter
  • Rosemary
  • Walnuts

How to make this Baked Brie Cranberry Bread Bowl

  • Prep the bread: Cut the top off the bread and remove the center, brush the bread with lightly with olive oil.

  • Assemble the bread bowl: Remove rind from the brie and place in the bread, top with cranberry sauce and fresh herbs. Cover with the bread top you cut off.

  • Cook: Bake the bread bowl for 20 mins.

Recipe notes and tips

  • Use a preheated oven.
  • You can use whole wheat or a white loaf - whichever suits!
  • You can use the brie as a template to cut around when removing the center of the loaf.
  • Score down the side of the bread bowl. This makes it easier to pull the bread apart.
  • Be sure to remove the rind from the brie. You want it to be nice and melty!
  • You can use store bought cranberry sauce or you can make your own - like this Homemade Cranberry Sauce recipe.
  • Allow the bread to cool slightly before serving, but only slightly, you want that cheese nice and melty!
  • Top with crushed walnuts and herbs.

FAQ's

How to hollow out a loaf

Use a standard sized wheel of brie to score the bread then, using a spoon, dig out a hole in the bread. The hole shouldn't go all the way through, just as deep as the brie wheel is fine. Be sure to lightly brush outside and inside the bread bowl before baking.

What to do with leftover bread

Don't throw out the leftover bread from the center of the bowl! You can toast the bread and serve them on the side or keep them as homemade rustic croutons for soups.

Can you make this Baked Brie Cranberry Bread Bowl ahead of time?

This dish is best served straight away, that way you get all the melty, oo-ey goo-ey cheese! If you need to keep this bread bowl warm before serving, you can wrap in foil. It'll stay warm for 30 mins to an hour.

You can store leftovers in an airtight container in the fridge for 3-4 days. Just pop in the microwave quickly or gently reheat in the oven for a few mins.

Ingredients

  • 1 large Boule loaf bread Italian or sour dough
  • 1 21 oz. French Brie Cheese round, rind removed
  • 1/2 cup cranberry sauce homemade or store bought
  • 1 tbsp. lightly flavored olive oil or melted butter
  • 1 tsp. fresh rosemary finely chopped
  • 2 tbsps. walnuts chopped, optional for garnishing before serving

Instructions

  • Preheat oven to 350 degree F.
  • Trim to remove the rind off the cheese.
  • Cut the top of the round bread (see photos) and place the package of the brie cheese to cut out to remove the center of the bread.
  • Brush the top and inside of the bread with the lightly flavored olive oil.
  • Place the brie cheese in the center of the bread bowl, top with cranberry sauce and fresh herbs. Cut the edges of the bread into slices all the down but without cutting them out. You want them to stay attached.
  • Add the cranberry sauce and fresh herbs on top of the cheese.
  • Bake in the oven for 20 minutes.
  • Remove and let the bread cool up for a couple of minutes before serving. Serve right away to enjoy it while the cheese is melty.
  • Garnish with chopped walnuts if you prefer.
