When it comes to appetizers, I never pass on them EVER. Feta Bruschetta is one of my most favorite appetizers out there. It’s fresh and delicious and I absolutely love making it at home because I add some extra ingredients I like in there as well.

Feta BruschettaHOW TO MAKE THE FETA BRUSCHETTA APPETIZER?

Most people make the Bruschetta recipe with tomatoes, balsamic vinegar, onions and basil as main ingredients. I LOVE adding fetta cheese and dried cranberries with mine. Everyone who tried this recipe at my place before, have given it a 5 star rating! They loved it! The best way to get this recipe going is by chopping up all the ingredients. Made sure the onions are super finely chopped. You will also need to chop the dried cranberries as well into smaller pieces.

Feta Bruschetta
Once all of your Feta Bruschetta ingredients are ready, you can either add the dressing now or cover and prepare later if you are preparing it ahead. The dressing consists of olive oil, lemon juice, salt, pepper, dried basil and balsamic vinegar. Once everything is mixed together, you can serve with some toasted crostini bread (cut small pieces from a French baguette, brush with olive oil and toast them in the oven for a few minutes).

QUICK TIP WHEN YOU MAKE THE FETA BRUSCHETTA:

I do not like to add the dressing ahead of time and store in the fridge. I prefer adding the dressing when I am ready to serve. I also recommend serving the dish cold. So use chilled tomatoes when you prepare them or chill the ingredients in the fridge before serving. This recipe does last in your fridge for a couple of days and left overs can also be used to make a bruschetta stuffed chicken recipe. Feta Bruschetta

If you love Bruschetta appetizers, you will absolutely love this Feta Bruschetta recipe because it has a delicious twist to the classic recipe.

Total Time: 20 minutes
Servings: 4 servings

Ingredients 

  • 3 cups of cherry tomatoes, diced ( 2 small packs, approx. 23 oz.)
  • 1/2 cup dried cranberries, finely chopped
  • 1/2 cup green onions, thinly chopped
  • 3 tbsps. fresh basil, finely chopped
  • 3 tbsps. purple onion, finely diced
  • 1/2 cup feta cheese, crumbled
  • 3 tbsps. olive oil
  • 1 tbsp. lemon juice
  • 1/2 tsp. salt
  • 1 tsp. fresh ground black pepper
  • 2 tbsps. balsamic vinegar
  • 1 tsp. dried basil

Instructions 

  • Dice and chop all the ingredients and place in a bowl.
  • Add in the olive oil, spices, vinegar and salt. Mix everything together well.
  • Serve with toasted crostini bread.

Notes

Serve chilled. If you are not serving right away, do not mix the salad marinade until you are ready to serve it. Lasts up to 2 days in the fridge, stored air tight container.
