A healthy addition to your salad cravings, this Greek Chickpea Salad has a little twist to a your ordinary Greek Salad. Instead of using lettuce, I added chickpeas to make it even more filling to not only east as a side dish but as a meal dish. This salad is also perfect for meal prepping.
WHAT INGREDIENTS ARE IN A GREEK CHICKPEA SALAD
You will need very few simple ingredients and that includes:
- Kalamata Olives
- Feta Cheese
- Purple Onion
HOW TO MAKE THE GREEK CHICKPEA SALAD
All it really take is to pretty much dice your veggies. You will need cubed or crumbled feta for this recipe as well. After dicing all your veggies, place everything in a bowl. Add in the Kalamata olives. In another small bowl or dressing cup, combine all the dressing ingredients and whisk well with either a fork or a small whisk. If you have a bottle then you can prepare a bigger batch of dressing and shake it well. You can store your extra dressing in the fridge for up to 1 week as long as its air tight and sealed.
Pour over the dressing to your salad ingredients and toss to coat the ingredients and serve right away. If you are preparing this for work or meal prep or even as a lunch box salad for your kids, I suggest that you just place the salad ingredients into the containers without pouring over the salad dressing and store the salad dressing in a small salad dressing container to pour over later on when you are ready to eat to prevent ingredients from losing their crunch. I usually use small these individual containers for my salads when I meal prep and they are disposable as well as recyclable. You can find them on Amazon. They are super hand for lunch boxes.
If you would like to have this salad as a vegan meal, you can always omit the feta cheese. - 1 cup canned or cooked chickpeas
- 1 cup grape tomatoes, diced
- 1/2 cup feta cheese, cubed or crumbled
- 2 tbsps. chopped parsley
- 1/3 cup Kalamata olives
- 1 cup cucumber, sliced
- 1/4 cup purple onion, petite diced
- 3/4 tsp. salt
- 1 Lemon, squeezed
- 2 tbsps. olive oil
- 2 tsp. dried oregano
- 2 tbsps. Dijon mustard
- 1 tbsp. ground black pepper
- 1 tsp garlic, minced
- Slice, chop and dice all your ingredients.
- In a sperate bowl, prepare the salad dressing.
- Pour dressing over the salad ingredients and toss well.
