  • Flour — all purpose flour works fine for this coffee cake
  • Sugar-use white granulated sugar or cane sugar.
  • Baking powder-helps the cake rise.
  • Salt-balances out the cake’s flavor.
  • Unsalted butter — you’ll need two sticks of unsalted butter, one melted and one cold.
  • Eggs-room temperature.
  • Vanilla extract– it’s best to use pure vanilla extract for maximum flavor.
  • Milk-you can use whole milk or 2%. Typically whole milk makes it richer.
  • Brown sugar-works best to make the streusel topping. Light or brown works fine.
  • Ground cinnamon-get fresh cinnamon powder so you get the max flavor out of the cinnamon.
  • Powdered sugar-use to make the sugar icing for topping.

How to Make a Cinnamon Streusel Coffee Cake

  • Prepare the oven and pan: Preheat your oven to 350F. Spray a 9×13 pan with non-stick spray and line with parchment paper.
  • Combine the dry ingredients: In a large bowl combine the flour, sugar, baking powder, and salt. Whisk until free of lumps.
  • Combine the wet ingredients: In a medium bowl combine the melted butter, eggs, vanilla, and milk.
  • Combine everything: Mix the wet and dry ingredients until just combined. Pour the batter into the prepared pan.

  • Make the cinnamon streusel topping: In a small bowl stir together the sugar, flour, and cinnamon until fully combined. Add in the butter and use clean hands to break up the butter into small pieces.
  • Add the streusel to the cake: Spread the topping all over the top of the cake.

  • Bake the coffee cake: Place in the oven and bake for 30-35 minutes until a toothpick inserted into the center comes out with only a few moist crumbs. Remove from the oven and allow to cool slightly before icing.
  • Make the icing: Combine all of the ingredients in a small bowl until smooth. Drizzle the icing over the cake.

Tips to Make this Moist Streusel Cake

  • Having your eggs at room temperature to help prevent lumpy batter.
  • The icing is optional! If you rather not have icing in the morning, you are more than welcome to skip it.
  • If you like extra streusels, you can definitely double up on the cinnamon streusel ingredients.
  • To check if the cake is done, insert a toothpick in the center. If it comes out clean or has just a few crumbs, it is done. 
  • To properly measure flour by the scoop, be sure to fluff the flour before spooning it into a measuring cup. This prevents the flour from being packed into a measuring cup. Level the top off inside of trying to pack it all in.
  • Be sure your oven is fully preheated before adding your cake to the oven.
  • Do not over mix the cake batter. Over mixing the batter can cause it to become dense.

For the Cake:

  • 3 cups flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 stick unsalted butter, melted
  • 2 whole eggs, room temperature

  • 1 ½ cup milk

For the Topping:
