Fresh bowtie pasta, pan seared shrimp, and colorful bell peppers are the star of this flavor packed recipe! This fresh and filling Shrimp Fajita Pasta Salad comes together in under 30 minutes, making it the perfect recipe for any occasion!
WHAT IS SHRIMP FAJITA PASTA SALAD?
Fajitas are a staple in Tex-Mex cuisine! Traditionally, a fajita is made with grilled meat, such as beef and chicken. The fajita meat is then served on a tortilla, similar to a taco.
In this pasta salad twist, pan seared shrimp, seasoned with Southwest seasoning, provide the fajita meat. Fresh cooked bowtie pasta gets tossed with pan cooked bell peppers, corn, and purple onion. This whole pasta salad is then tossed in a refreshing dressing made with olive oil, lemon juice, and vinegar.
WHY WE LOVE THIS DISH!
One of the main reasons I love this recipe is because it is such a quick and flavorful recipe. When you are busy, the last thing you want to do is spend all day in the kitchen to make a unique and delicious dinner. This pasta salad literally takes less than 30 minutes from start to finish! Meaning you can make this dish and serve it quickly. Your family will love how tasty it is and you will love not having to spend your whole evening in the kitchen to get it on the table.
Shrimp Fajita Pasta Salad makes the perfect all in one meal! This recipe is a well balanced meal with carbs, protein, and a serving of vegetables! It goes great on it’s own or could be served with a side salad for an extra serving of veggies!
Another reason this dish is great is that you can make it as a meal prep recipe. It cooks quickly and stores well in food prep containers for the week. Which means you can make and pack your lunches for the week in just 30 minutes!
We also love this dish because it is so versatile! Whether you want to make it gluten free, vegetarian, or swap the shrimp out for chicken, you can!
HOW TO MAKE SHRIMP FAJITA PASTA SALAD
Shrimp– For this recipe you need peeled, deveined shrimp. Fresh or frozen shrimp work beautifully in this recipe. If you are using frozen shrimp, be sure to safely thaw the shrimp before cooking. You can either allow the shrimp to come to room temperature in a glass bowl, or pour warm water over the shrimp to get it to thaw.
Pasta– I use bowtie pasta in this pasta salad recipe. You could also use small pastas such as elbow, shells, rotini, or penne pasta.
Vegetables– Corn, purple onion, and bell pepper shine in this fajita pasta salad! It’s important to try and get three different colors of bell pepper if you can. Frozen or canned corn work perfectly in this recipe, just be sure to thaw the frozen corn before adding it to the salad.
Seasoning- A zesty southwest seasoning is used for cooking the shrimp and seasoning the finished pasta salad. If you do not have a southwest seasoning blend you can make your own! You can check out my Pinterest page where I share lots of great recipes, including make your own blends.
Dressing- Once the shrimp, pasta, and vegetables are ready this fresh bowl of pasta salad is tossed with an olive oil, vinegar, and lemon juice dressing.
Begin by cooking the bowtie pasta according to the package instructions. Drain the pasta and set aside.
While the pasta cooks, dice the red, green, and orange bell peppers. Dice the purple onion and mince the garlic, set aside. Keep the diced bell peppers separate from the onion and garlic.
In a small bowl, season the shrimp with 1 Tbsp. fajita seasoning, 1 Tbsp. olive oil, and the juice of 1/2 a lemon. In a 12-inch skillet, heat 1 Tbsp of olive oil. Add the shrimp to the skillet and pan sear the shrimp, be sure to flip and cook both sides and . Once the shrimp cooks, remove from the skillet and set aside in a large bowl.
In the same skillet, add 1 Tbsp olive oil. Add the diced bell peppers to the skillet and pan sear until tender.
In the large bowl with the shrimp, add the cooked bell peppers, pasta, corn, and diced purple onion. Then add 1 Tbsp olive oil, the juice of a lemon, fajita seasoning, cumin powder, salt, black pepper, and vinegar. Mix everything together well. Serve and enjoy!
VARIATIONS TO SHRIMP FAJITA PASTA SALAD
Gluten Free– You can make this delicious shrimp pasta salad a delightfully gluten-free recipe by swapping the bowtie pasta for a gluten free pasta.
Vegetarian– Simply omit the shrimp from the recipe to make a vegetarian option.
Swap the shrimp with chicken. Chicken also makes a delicious pasta salad. You will want to be careful with your cook time as cubed chicken cooks longer than shrimp. Make sure that when you are cooking the chicken you cook it all the way through.
