For the Potatoes
- 4 medium russet potatoes
- 4 cups water + 1 teaspoon salt
- 4 tablespoons cornstarch
- 1 teaspoon salt
- 1 teaspoon ground pepper
- oil for deep frying
For the Sauce
- 2 tablespoons oil
- 1 teaspoon garlic minced
- 1 teaspoon ginger grated
- 1 teaspoon crushed red chili flakes
- 3 tablespoons honey
- 2 tablespoons tomato ketchup
- 1 ½ tablespoons soy sauce
- 1 ½ tablespoons red chili paste or sauce
- 1 teaspoon rice vinegar
- ¼ cup water
- 1 teaspoon cornstarch + 1 tablespoon water
- 1 tablespoon sesame seeds
- 2 tablespoons green onion chopped
Prepare the Potatoes
Wash and peel the potatoes. Cut them into French fry-shaped pieces and place them in water to remove excess starch.
Bring 4 cups of salted water to a boil in a large saucepan. Add the potatoes and cook until partially tender but still firm enough to hold their shape. Drain well and transfer them to a wide bowl.
Add the cornstarch, salt, and pepper to the potatoes. Toss until evenly coated.
Heat the oil in a wok. Carefully add the potatoes in batches and deep-fry until crispy and golden. Set the fried potatoes aside.
Make the Honey Chilli Sauce
Heat a medium pan and add the oil, garlic, ginger, and crushed red chilli flakes. Sauté for 2 minutes.
Add the honey, ketchup, soy sauce, red chilli sauce, and rice vinegar to the pan. Stir to combine.
Reduce the heat to low and add the water. When the sauce reaches a simmer, add the cornstarch slurry made with 1 teaspoon of cornstarch and 1 tablespoon of water. Cook until the sauce thickens.
Add the crispy fried potatoes to the honey chilli sauce and toss until evenly coated.
Sprinkle the potatoes with sesame seeds and green onions. Toss to combine and serve while still warm.
