Grilled Garlic Shrimp

Ingredients

  • ¼ cup olive oil
  • 3 tablespoons parsley chopped
  • 2 tablespoons fresh lemon juice
  • 2 teaspoon minced garlic
  • 1 teaspoon dried Italian seasonings
  • 1 teaspoon salt
  • 1 teaspoon crushed red pepper flakes
  • ½ teaspoon ground black pepper
  • lb large shrimp peeled & deveined, tail-ON
  • Lemon wedges to garnish

Instructions

  • In a small bowl, whisk together the ingredients to marinate; olive oil, parsley, lemon juice, garlic, lime zest, Italian seasonings, salt, crushed red pepper, and black pepper.
  • Pour the marinade over the shrimp and toss until well coated. Allow the shrimp to marinate for at least 30 minutes.
  • Thread the shrimp on a wooden or metal skewer until the end of the skewers.
  • Place the shrimp skewers on the griddle or grill pan and cook for 4-5 minutes until the shrimp is cooked through, turning the skewers often.
  • Once done, garnish the shrimp skewers with parsley and lemon wedges before servings.

Notes

  • Marination Time: Marinate the shrimp for at least 30 minutes but no more than 2 hours to prevent the acid from the lemon juice from cooking the shrimp.
  • Grilling Temperature: Preheat your grill to medium-high heat. This ensures the shrimp cooks quickly and evenly.
  • Avoid Overcooking: Grill shrimp for about 2-3 minutes per side. Overcooked shrimp can become rubbery.
