- ¼ cup olive oil
- 3 tablespoons parsley chopped
- 2 tablespoons fresh lemon juice
- 2 teaspoon minced garlic
- 1 teaspoon dried Italian seasonings
- 1 teaspoon salt
- 1 teaspoon crushed red pepper flakes
- ½ teaspoon ground black pepper
- 1½ lb large shrimp peeled & deveined, tail-ON
- Lemon wedges to garnish
In a small bowl, whisk together the ingredients to marinate; olive oil, parsley, lemon juice, garlic, lime zest, Italian seasonings, salt, crushed red pepper, and black pepper.
Pour the marinade over the shrimp and toss until well coated. Allow the shrimp to marinate for at least 30 minutes.
Thread the shrimp on a wooden or metal skewer until the end of the skewers.
Place the shrimp skewers on the griddle or grill pan and cook for 4-5 minutes until the shrimp is cooked through, turning the skewers often.
Once done, garnish the shrimp skewers with parsley and lemon wedges before servings.
- Marination Time: Marinate the shrimp for at least 30 minutes but no more than 2 hours to prevent the acid from the lemon juice from cooking the shrimp.
- Grilling Temperature: Preheat your grill to medium-high heat. This ensures the shrimp cooks quickly and evenly.
- Avoid Overcooking: Grill shrimp for about 2-3 minutes per side. Overcooked shrimp can become rubbery.
