Course: Main Dish
Cuisine: American
Servings: 4 servings
- 2 pounds chicken tenderloins white tendon removed
- chopped parsley for garnish
- lemon slices for garnish
- rosemary stems for garnish
For the Marinade
- 2 tablespoons old-style whole-grain mustard
- 2 tablespoons coarse Dijon mustard
- 3 tablespoons honey
- 3 teaspoons light-tasting olive oil or canola oil
- zest of 1 whole lemon
- 1 tablespoon lemon juice
- ½ teaspoon finely chopped rosemary
- 1 teaspoon onion powder
- 2 cloves garlic minced
- 1 teaspoon freshly cracked black pepper
- ¾ teaspoon salt
- ½ teaspoon paprika
- ½ teaspoon ginger powder
In a bowl, mix all the honey mustard marinade ingredients until well combined.
Add the chicken tenderloins to the bowl and toss until evenly coated with the marinade.
Cover the bowl and refrigerate the chicken for 30 minutes to 1 hour.
Shortly before the chicken finishes marinating, preheat an indoor or outdoor grill.
Place the chicken tenderloins on the preheated grill. Cook for approximately 3–4 minutes per side, or until the thickest part reaches an internal temperature of 165°F.
Garnish with chopped parsley, lemon slices, and rosemary stems before serving.
-
You can marinate the chicken up to 2 days ahead in an airtight container in the refrigerator.
-
Outdoor grilling gives the chicken a smoky, chargrilled flavor. An indoor grill also works well.
