Ingredients

  • 4 cod fillets
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • 4 tablespoons unsalted butter melted
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon garlic minced
  • 1 lemon sliced into rounds
  • chopped parsley to garnish

Instructions

  • Preheat the oven to 400°F.
  • Pat the cod fillets dry with a kitchen towel. Season with salt and pepper, then set aside.
  • Add the melted butter, olive oil, Cajun seasoning, paprika, and garlic to a small bowl. Mix until well combined to make the Cajun butter sauce.
  • Arrange the lemon slices in a 9 x 13-inch baking dish. Place the cod fillets over the lemon slices.
  • Pour the Cajun butter sauce over the cod fillets. Bake for 12-15 minutes, until the cod is cooked through and opaque.
  • Transfer the cod to a serving plate. Garnish with chopped parsley and serve with lemon slices.

Notes

Line the 9 x 13-inch baking dish with foil or parchment paper for easier cleanup. The Cajun butter sauce can collect around the edges during baking, and the liner makes cleanup easier afterward.
