Servings: 4 servings
- 1.5 lbs. large shrimp peeled, deveined and tails off
- 1 large lime a juicy one
- 3/4 tsp. salt
- 2 tbsps. olive oil
- 2 tbsps. southwest chipotle seasoning I used Dash, no salt seasoning (from Walmart)
- 4 cloves garlic minced
- 1/2 tsp. black pepper or more to taste
- 1 large zucchini Cut lengthwise and sliced into 1/4 inch pieces (see photo)
- 1 large yellow squash Cut lengthwise and sliced into 1/4 inch pieces (see photo)
- 1 large red pepper cubed
- 1 small onion cubed
- 8 oz. cremini mushrooms OPTIONAL
Preheat air fryer to 400 F.
In a bowl, marinate the shrimp with the spices, salt, garlic and olive oil. If you choose to marinate it for 30 minutes, you can do so but not required.
Add in the veggies and toss to mix together with the shrimp.
Cook the shrimp and veggies in 2 batches, each batch for 8 minutes. Open and shake the basket at least 1-2 times during the cook time. If you want them more well done, you can add 1-2 more minutes of cooking time.
Remove from the basket and transfer to a dish. Garnish with some fresh chopped parsley and lime wedges.
- Use a preheated air fryer.
- You can leave the shrimp to marinate for up to 30 mins, but it's not essential.
- Air fryer's vary in size, cook in batches if needed.
- If you want to control your salt content, use a low sodium chipotle seasoning (I found it in Walmart).
- Cut your veggies into similar sizes, so they cook evenly.
- Garnish with chopped parsley and lime wedges.
