Air Fryer Red Potatoes

Tender red potatoes perfectly seasoned with paprika and garlic dusted with parmesan and air-fried to a crisp make an ideal side for a weeknight dinner!

Ingredients

  • 1 ½ lb baby red potatoes sliced into halves
  • 2 tablespoons olive oil
  • 1 teaspoon garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ cup parmesan cheese grated
  • Chopped parsley garnish

Instructions

  • Preheat the Air Fryer to 390 degrees F.
  • Wash and dry the potatoes with a kitchen towel. Cut the potatoes vertically into halves, then transfer them to a medium bowl.
  • Pour in the olive oil along with the minced garlic, paprika, salt, and pepper. Mix well until everything comes together.
  • Sprinkle Parmesan cheese and toss until well-coated on the potatoes.
  • Transfer the potatoes to the air fryer basket in a single layer and cook for 20-22 minutes until golden and crispy. (Flip the potatoes in the middle of cooking to the other side.)
  • Once done, garnish the potatoes with chopped parsley and serve while they're still warm.

Notes

  • Don't overcrowd the air fryer basket; give the potatoes space to crisp up.
  • Make sure to shake the basket during cooking for even browning.
  • Adjust seasoning to your taste.
  • Storing: Store in an airtight container for 3-5 days in the fridge. 
  • To reheat: Simply reheat in the air fryer at 400 degrees Fahrenheit until crispy again and heated through.
