Ingredients

  • 1 ½ lb baby red potatoes sliced into halves
  • 2 tablespoons olive oil
  • 1 teaspoon garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ cup parmesan cheese grated
  • Chopped parsley garnish

Instructions

  • Preheat the Air Fryer to 400 degrees F.
  • Wash and dry the potatoes with a kitchen towel. Cut the potatoes vertically into halves, then transfer them to a medium bowl.
  • Pour in the olive oil along with the minced garlic, paprika, salt, and pepper. Mix well until everything comes together.
  • Sprinkle Parmesan cheese and toss until well-coated on the potatoes.
  • Transfer the potatoes to the air fryer basket in a single layer and cook for 20-25 minutes until golden and crispy. Shake basket halfway through.
  • Once done, garnish the potatoes with chopped parsley and serve while they're still warm.

Notes

    • Don’t Overcrowd: Arrange the potatoes in a single layer to ensure even cooking. Cook in batches if necessary.
    • Dry the Potatoes: Moisture prevents crisping, so pat the potatoes dry before seasoning.
    • Shake the Basket: Tossing the potatoes halfway through ensures even browning.
    • Adjust Cooking Time: Air fryer models vary, so check for doneness starting at 20 minutes.
