Baked BBQ Chicken Bites

Baked BBQ Chicken Bites are a delicious entree or appetizer. Tender baked chicken bites are topped with sweet and spicy honey BBQ sauce that’s sticky and delicious. Serve with your favorite sides for a super simple main dish.

Ingredients

For the chicken

  • 1 ½ lb chicken breasts cut into bite-size pieces
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 cup all-purpose flour
  • 2 eggs
  • 2 tablespoons milk

For the BBQ sauce

  • ½ cup BBQ sauce
  • ¼ cup ketchup
  • 3 tablespoon honey
  • Chopped parsley to garnish (optional)

Instructions

  • Preheat the oven to 400 degrees F. Line a parchment over a baking sheet and keep it aside.
  • Season the chicken pieces with paprika, garlic powder, salt, and pepper. Mix it well and set it aside.
  • In a medium bowl, place the flour, and in another bowl, whisk the eggs with milk and keep it aside.
  • Dredge the chicken pieces first in the flour, then in the egg mixture, and then back to the flour until well coated.
  • Arrange the chicken pieces on the prepared baking sheet and bake for 18-20 minutes until the chicken is cooked through and slightly golden by flipping the chicken halfway through.
  • Meanwhile, in a small saucepan, prepare the sauce by combining BBQ sauce, ketchup and honey. Allow the sauce to simmer for 2-3 minutes.
  • Once the chicken bites are out of the oven, place the chicken in a large bowl and pour the prepared sauce over it and toss until the sauce is evenly coated.
  • Garnish the chicken bites with fresh parsley and serve with celery along the sides.

Notes

  • Cut the chicken into similar-sized bites for even cooking. 
  • Dredge in the flour before AND after using the egg mixture. This will help to develop a nice crust. 
  • Use cornstarch or 1-to-1 flour instead of wheat flour for a gluten free option. 
  • Easily alter the flavor of this recipe by selecting a different BBQ sauce. 
  • Substitute the honey with real maple syrup. 
  • Cook the chicken to a minimum temperature of 165 degrees F when checked with a meat thermometer.
