Ingredients

  • 4 cod filets
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • 4 tablespoons unsalted butter melted
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon garlic minced
  • 1 lemon sliced into rounds
  • Chopped parsley to garnish

Instructions

  • Preheat the oven to 400 degrees F.
  • Pat dry the cod filet with a kitchen towel and season the cod filets with pepper and salt. Keep it aside.
  • In a small bowl, combine melted butter, olive oil, Cajun seasoning, paprika, and garlic. Mix to combine.
  • Arrange the lemon slices in a 9X13 baking dish and place the cod filet on top.
  • Pour the prepared butter sauce over the filet and bake them for 12-15 minutes until they are cooked and look opaque.
  • Arrange the cod on a serving plate, garnish with chopped parsley, and serve with lemon slices.

Notes

  • Purchase fresh fish when possible.
  • If using frozen cod, thaw it thoroughly and dry it with paper towels before seasoning and baking.
  • Storebought cajun seasoning mixes can be pretty salty. Use unsalted butter to prevent over-salting this dish.
  • Line your baking dish with foil or parchment for easy cleanup.
  • Don’t overcook the fish, or it can become tough.
