Grilled Garlic Shrimp Skewers

Grilled garlic shrimp skewers are marinated in a homemade lemon garlic dressing and then grilled in about 5 minutes with the tail on so they are easy to pick up and devour.

Ingredients

  • ¼ cup olive oil
  • 3 tablespoons parsley chopped
  • 2 tablespoons fresh lemon juice
  • 2 teaspoon minced garlic
  • 1 teaspoon dried Italian seasonings
  • 1 teaspoon salt
  • 1 teaspoon crushed red pepper flakes
  • ½ teaspoon ground black pepper
  • 1.5 lb large shrimp peeled & deveined, tail-ON
  • Lemon wedges to garnish

Instructions

  • In a small bowl, whisk together the ingredients to marinate; olive oil, parsley, lemon juice, garlic, lime zest, Italian seasonings, salt, crushed red pepper, and black pepper.
  • Pour the marinade over the shrimp and toss until well coated. Allow the shrimp to marinate for at least 30 minutes.
  • Thread the shrimp on a wooden or metal skewer until the end of the skewers.
  • Place the shrimp skewers on the griddle or grill pan and cook for 4-5 minutes until the shrimp is cooked through, turning the skewers often.
  • Once done, garnish the shrimp skewers with parsley and lemon wedges before servings.

Notes

  • Jumbo Shrimp usually means 16-20 shrimp per pound. 
  • If you buy frozen shrimp, thaw completely before proceeding with the recipe. 
  • Buying shrimp that is peeled and deveined will save you time. 
  • Tail-on shrimp are easy to pick up. No forks are needed. 
  • Marinate for at least 30 minutes but not more than a few hours. 
  • If using wooden or bamboo skewers, soak them in water before using them. 
  • Preheat your grill pan so it’s hot when the shrimp hits the surface.
  • Shrimp will turn pink and translucent when cooked through. 
  • Avoid overcooking shrimp, as they can become rubbery.
