These delicious Herb and Parmesan Oven Roasted Potatoes is one of my favorite sides! They require a few minutes of prep and they come out wonderfully crispy on the outside and fluffy in the middle.
Cut the potatoes in half and rinse. Add the all ingredients to a bowl, add the potatoes and toss.
Toss the potatoes on a parchment paper. Put cheese on top. Bake for 30-40 minutes. Cool and serve.
– One you have rinsed the cut potatoes, let them dry for a few minutes. – Choose similar sized potatoes so that they cook evenly.
