Steak
- 1 pack Angus N.Y. strip steak pack of 3, about 2.5 lbs
- freshly ground black pepper and salt to taste, for marinating
- garlic cloves and fresh rosemary stems optional
Creamy Mushroom Sauce
- ½ stick salted butter ¼ cup
- 1 tbsp. garlic minced
- 2 tsp. garlic powder
- 2 cups heavy whipping cream
- 1½ tsp. salt
- 1 tbsp. black pepper freshly ground
- 1 tbsp. extra virgin olive oil
- 8 oz. baby bella mushrooms sliced
Season the steak with salt and freshly ground black pepper.
Heat a cast iron skillet over high heat. Add the butter, herbs, and steak. Cook until the steaks are halfway done.
Transfer the steaks to a plate and cover with aluminum foil.
Add 1 tablespoon of olive oil to the same skillet. Sauté the fresh garlic for about 30 seconds. Add the mushrooms and sauté until tender.
Add the heavy whipping cream, ground black pepper, garlic powder, and salt to the skillet. Cook until the mixture thickens into a creamy mushroom sauce. Taste and adjust the salt as needed.
Return the steaks to the skillet. Cook over medium-low heat until the steaks are well done.
Remove the skillet from the heat. Top with fresh herbs, if desired. Serve with steak fries or baked potato wedges.
- Let the mushrooms cook until the liquid they release evaporates and they begin to brown and caramelize.
- Garnish the mushroom sauce with fresh parsley or rosemary. Dill, chives, or thyme also work well.
