Spicy Salmon Salad
Make this easy and delicious Spicy Salmon Salad that is very healthy and low in carbs. It requires just a few ingredients and a simple salad dressing.

SALMON:
- 2 large salmon fillet 16 oz.
- 1 tsp. cayenne pepper
- 1 tbsp. paprika
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1/2 tsp. black pepper
- 1/4 tsp. salt
- 1 tbsp. olive oil
SALAD:
- 2 cups baby arugula
- 2 cups baby spinach
- 1/2 cup baby radish sliced
- 1/4 cup purple onion thinly sliced
- 2 large avocadoes sliced
- 1 cup cherry tomatoes cut in half
- 1 cup corn chunks from boiled corn
DRESSING:
- 1/4 cup light mayo
- 2 tbsps. olive oil
- 1 lemon juiced
- 1/2 tsp. salt
- 3-4 leaves of Italian parsley
- 1 garlic clove minced
Marinate the salmon and then pan sear them until fully cooked. Cover and set aside.
Prepare the salad ingredients and lay on a platter, spreading ingredients around evenly.
Add in pieces of the salmon to the salad. Prepare the dressing in a small food processor or by hand and pour the dressing over the salad.
Serve and enjoy!
- Wrap the salmon with aluminum foil to preserve the heat and moisture while you assemble the salad.
- Make sure to adjust the salmon cooking time according to thickness, usually between 7-12 mins.
- Mix and match your veggies however you like!
- Add the dressing just before serving.
