For the dressing
- 1 cup Mayonnaise
- ¼ cup white vinegar
- 2 tablespoons sweet pickle relish
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 tablespoon fresh dill finely chopped
- ½ teaspoon salt
- ½ teaspoon ground pepper
For the salad
- 1 lb elbow macaroni pasta
- 1 lb cooked medium shrimp
- ½ medium orange bell pepper chopped
- ½ medium red bell pepper chopped
- ½ cup red onion chopped
- ½ cup celery chopped
- Lime wedges to serve
In a small bowl, combine the ingredients for the dressing: mayonnaise, vinegar, sweet pickle relish, honey, Dijon mustard, dill, salt, and pepper. Mix with a fork until well incorporated and set aside.
Cook the macaroni pasta according to package instructions, reducing the cooking time by 1 minute. Drain the pasta and set it aside.
In a large bowl, combine the ingredients for the salad: cooked macaroni, shrimp, orange and red bell pepper, red onion, and celery.
Pour the dressing over the salad and toss until well coated.
Garnish the salad with fresh dill and transfer it to a serving bowl. Serve with lime wedges on the side.
- Chill the salad for at least 30 minutes before serving to allow the flavors to meld.
- If you want a lighter dressing, swap half the mayo with plain Greek yogurt.
- Make sure not to overcook the pasta to maintain a firm texture.
