Double Boiler Method
Chop chocolate bars or blocks into small, evenly sized pieces. If you're using chocolate chips, no chopping is needed.
To melt chocolate on the stove, add 1 cup of water to a saucepan and bring it to a gentle simmer over low heat.
Place a dry, heat-resistant bowl over the saucepan. Note: Make sure the bottom of the bowl doesn't touch the water. The chocolate should melt from the gentle heat of the steam rather than direct contact with the hot water. Add the chocolate to the bowl and stir occasionally until it's completely melted and smooth.
Carefully remove the bowl from the saucepan and use the melted chocolate immediately.
Microwave Method
Chop chocolate bars or blocks into small, evenly sized pieces. If you're using chocolate chips, no chopping is needed.
Place the chocolate in a dry, microwave-safe bowl. Don't overfill the bowl. Work in two batches if needed.
Microwave at 50% power for 1 minute.
Stir the chocolate, then microwave at 50% power in 20-second intervals. Stir well after each interval and repeat until the chocolate is almost fully melted.
When only a few small pieces remain, stop microwaving and stir until the remaining chocolate has melted and the mixture is smooth.
Use the melted chocolate immediately.
