For salad
- 4 cups spring mix greens
- 1 ½ cup colored grape tomatoes halved
- 1 cup cucumber thinly sliced
- ½ medium red onion thinly sliced
- ½ cup carrot shredded
- ½ medium avocado sliced
- ⅓ cup pepperoncini sliced
- ¼ cup seasoned breadcrumbs
- ¼ cup shredded parmesan cheese
For dressing
- ½ cup olive oil
- ¼ cup red wine vinegar
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1 teaspoon dried oregano
- 1 teaspoon garlic minced
- ½ teaspoon salt
- ½ teaspoon black pepper
In a small bowl, whisk together the dressing ingredients: olive oil, red wine vinegar, honey, Dijon mustard, oregano, garlic, salt, and pepper. Whisk vigorously with a fork until well combined. Set the dressing aside.
