Candied Walnuts
- ½ cup brown sugar
- ¼ cup water
- 1 cup walnut halves
- 1 tbsp butter
Shrimp
- 1 lb small raw shrimp peeled, deveined, and tails removed
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- ¼ cup cornstarch
- vegetable oil for frying
Honey Sauce
- ¼ cup mayonnaise
- 1 tablespoon sweetened condensed milk
- 1 tablespoon honey
- 1 tablespoon lemon juice
- 2 tablespoons scallions chopped
Add the brown sugar, butter, water, and walnuts to a medium pan. Bring to a boil and cook until the sugar mixture thickens, watching carefully to prevent burning.
Transfer the candied walnuts to parchment paper or a mat and spread them into a single layer. Let the walnuts cool completely.
Season the shrimp with onion powder, garlic powder, salt, and pepper. Coat the seasoned shrimp with cornstarch, then deep-fry in batches until curled and lightly golden brown. Set the fried shrimp aside.
Add the mayonnaise, condensed milk, honey, and lemon juice to a medium bowl. Mix until well combined, then set the sauce aside.
Add the fried shrimp and candied walnuts to the prepared sauce. Toss gently until evenly coated.
Garnish the honey walnut shrimp with spring onions and serve.
