Ingredients

  • 1 tablespoon olive oil
  • 1 cup yellow onion chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon oregano
  • ½ teaspoon ground black pepper
  • salt to taste
  • 2 cups chicken broth
  • 4 oz canned green chili
  • 14 oz canned cannellini beans drained and washed
  • 1 cup frozen corn
  • 4 oz cream cheese
  • 2 cups shredded rotisserie chicken or leftover chicken
  • ⅓ cup heavy cream
  • cilantro to garnish

Optional Toppings

  • sour cream to serve
  • crushed tortilla chips to serve
  • avocado to serve

Instructions

  • Heat the oil in a Dutch oven over medium heat. Once the oil is hot, add the chopped onion and garlic and sauté until translucent, about 4-5 minutes.
  • Sprinkle the paprika, ground cumin, oregano, black pepper, and salt over the onion and garlic. Stir to combine, then pour the chicken broth into the Dutch oven and simmer for 4-5 minutes.
  • Stir the canned green chili, cannellini beans, frozen corn, and cream cheese into the broth. Cook for 2 minutes.
  • Add the shredded chicken to the chili. Cover the pot and simmer for another 7-8 minutes.
  • Pour the heavy cream into the chili along with the chopped cilantro. Stir until combined, then turn off the heat.
  • Transfer the chili to a serving bowl. Top with sour cream, crushed tortilla chips, and diced or sliced avocado.

Notes

  • The chili will thicken as it cools. Keep that in mind before you simmer it longer.
  • For a thinner consistency, adjust with a small amount of chicken broth.
  • If you use rotisserie chicken, remove the skin before you shred the meat.
  • For extra heat, serve sliced jalapeños or hot sauce on the side.
