Ingredients

For the Cajun Salmon

  • 4 center-cut salmon fillets 6 oz each
  • 2 tablespoons Cajun seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

For the Cream Sauce

  • 1 tablespoon unsalted butter
  • 1 teaspoon minced garlic
  • 1 small shallot finely chopped
  • ½ cup chicken broth
  • 1 cup heavy whipping cream
  • ½ teaspoon red chili flakes
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice
  • chopped fresh parsley for garnish
  • lemon wedges to serve

Instructions

  • Season the salmon fillets with Cajun seasoning, salt, and black pepper.
  • Heat the olive oil in a large skillet over medium heat. Add the salmon fillets and cook for 4–5 minutes, until halfway cooked. Transfer the salmon to a plate and set aside.
  • Add the butter, minced garlic, and chopped shallot to the same skillet. Cook for 1 minute, then pour in the chicken broth to deglaze the skillet. Let the broth simmer for a couple of minutes.
  • Pour in the heavy whipping cream and season with red chili flakes, salt, and black pepper. Let the sauce simmer for a couple of minutes.
  • Return the salmon to the skillet and cook for 2–3 minutes, until the salmon is cooked through and the sauce thickens slightly. Finish with the lemon juice.
  • Garnish the creamy Cajun salmon with chopped fresh parsley. Serve warm with greens and lemon wedges.

Notes

  • Pat the salmon fillets dry with paper towels before seasoning to remove excess moisture and encourage better browning.
  • Apply the Cajun seasoning just before cooking to prevent the salt from drawing excess moisture to the surface.
  • Preheat the skillet and oil before adding the salmon for more even searing.
  • Leave the salmon undisturbed during the initial 4–5 minutes of cooking to achieve a browned, seasoned crust.
