For the Chicken
- 2 whole chicken breasts sliced lengthwise
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper
- ½ teaspoon salt
- 2 tablespoons olive oil
For the Roux
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
For the Gravy
- 1 ½ cups low-sodium chicken broth
- 1 teaspoon low-sodium soy sauce
- ½ teaspoon onion powder
- salt and pepper to taste
Season the chicken breast halves with Italian seasonings, garlic powder, pepper, and salt.
Heat a large skillet with oil over medium heat. Add the chicken breasts and cook for 5-6 minutes, until golden. Transfer them to a plate and set aside.
Add the butter to the same skillet. Once the butter melts, sprinkle the flour over the butter and cook for 1 minute to form the roux.
Pour the chicken broth into the skillet while whisking the mixture. Add the onion powder, soy sauce, salt, and pepper, then let the gravy simmer for 5 minutes.
Transfer the chicken back to the skillet and cook until the sauce thickens and the chicken is cooked through.
Garnish the chicken and gravy with chopped parsley and serve over mashed potatoes.
- Pat the chicken breasts dry with paper towels before seasoning to help them sear and brown better.
