- 3 pound boneless turkey breast with skin
- 4 tablespoons unsalted butter at room temperature
- 1 tablespoon minced garlic
- 2 teaspoons Cajun seasonings
- 1 ½ teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- Fresh herbs to garnish
- Pomegranate pearls to garnish
- Lemon wedges to serve
Preheat the oven to 400°F. Line a baking sheet with aluminum foil or grease it with oil and set aside.
Pat the turkey breast dry with a kitchen towel.
In a medium bowl, mix together the butter, Cajun seasoning, paprika, salt, black pepper, and thyme to form a paste.
Spread the spice mixture under the turkey skin, then rub the remaining mixture evenly over the entire turkey breast.
Place the turkey on the prepared baking sheet and roast for about 1 hour, or until the internal temperature reaches 165°F.
Remove the turkey from the oven and let it rest for 10 minutes. Garnish with fresh herbs and pomegranate seeds.
Slice and serve with lemon wedges on the side.
Storing: Place leftover turkey in an airtight container and refrigerate for up to 4 days.
To Reheat: Place slices in a covered dish and warm in a 350 degree F oven for 10-15 minutes until heated through. Or reheat in the microwave in 30-second intervals until warm.
Freezing: Freeze any leftover turkey in an airtight freezer-safe bag for up to 3 months. Thaw in the fridge overnight before reheating.
