Ingredients

  • 8 ounce linguine pasta
  • 2 tablespoons unsalted butter
  • ½ cup yellow onion chopped
  • 4 garlic cloves minced
  • 1 box Boursin Cheese (5.3 ounces)
  • 1 cup heavy cream
  • 2 cups fresh spinach chopped
  • cup parmesan cheese grated
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • ½ teaspoon crushed red pepper flakes
  • Chopped parsley to garnish

Instructions

  • Cook the linguine pasta in salted water following the pasta instructions. Drain the water and set it aside.
  • Heat a large skillet with butter. Once the butter is melted, add the chopped onion and minced garlic and cook for 3-5 minutes.
  • Stir in the heavy cream along with the Boursin cheese. Break down the cheese with the help of a ladle and cook for 2 minutes until everything comes together.
  • Add the chopped spinach and cook until it's wilted in the creamy sauce.
  • Add the Parmesan cheese along with the seasonings—salt, pepper, and crushed red pepper flakes.
  • Once the cheese is melted, add the cooked pasta along with ½ cup of pasta water. Toss it until everything is well combined.
  • Once done, garnish the Boursin cheese pasta with freshly shaved Parmesan cheese.

Notes

  • Al dente Pasta: Cook pasta just until it has a slight bite for the perfect texture.
  • Room Temperature Boursin: Allow Boursin cheese to come to room temperature for easier mixing.
  • Garnish Right Before Serving: Freshly ground black pepper and herbs should be added just before serving for maximum flavor.
  • Add Proteins: Boost the nutritional value and add texture by including protein sources like grilled chicken, shrimp, or roasted vegetables. This not only enhances the dish,  but also makes it a more well-rounded meal.
  • Pasta: Experiment with different types of pasta or use whatever pasta you have on hand. The flavor of the pasta may be high-end, but the dish itself is flexible and low maintenance.
