- 6 cod filets
- ⅓ cup chopped cilantro
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- 1 teaspoon garlic minced
- ¾ teaspoon paprika
- ¾ teaspoon ground cumin
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 1 whole lime sliced into rounds
- ½ teaspoon crushed red pepper flakes optional
Preheat the oven to 400 degrees F.
Use a kitchen towel to pat dry the cod filet and place it in a rectangular baking dish.
In a small bowl, combine cilantro, butter, olive oil, lime juice, garlic, paprika, cumin, salt, and pepper.
Evenly spread the cilantro butter mixture over the cod filet.
Lay the lime slices at the bottom of the baking dish.
Bake the cod in the oven for 12-15 minutes, or until it is cooked through.
Once done, garnish the cod filet with red peppers and serve it alongside a salad.
- Use paper towels to pat the cod filets dry. This helps the fish cook evenly and develop a nice crust.
- If you have the time, marinate the cod in the lime juice, garlic, and herbs for 15-30 minutes. This enhances the flavor.
- Use an oven-safe dish and grease it to prevent sticking.
