Ingredients

For Chicken

  • ½ cup plain yogurt
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons chopped parsley
  • 1 ½ lb skinless chicken thighs cut into bite-size pieces

For Parmesan Butter Sauce

  • cup unsalted butter
  • ¼ cup grated parmesan cheese
  • 2 tablespoons chopped parsley
  • 1 teaspoon minced garlic
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper

Instructions

  • Preheat the oven to 450 degrees Fahrenheit. Line a baking tray with aluminum foil and place a rack above the tray. Set it aside.
  • In a large bowl, combine the ingredients for marinating the chicken: yogurt, oil, paprika, cumin, salt, black pepper, garlic powder, and parsley.
  • Add the chicken pieces to the marinade, ensuring they are well coated. Allow the chicken pieces to marinate for at least 30 minutes to absorb the flavors.
  • Thread the marinated chicken pieces onto wooden or metal skewers, pushing them to the end of the skewers. Ensure that the chicken pieces are evenly distributed.
  • Place the chicken skewers on the rack in the baking tray, making sure they are evenly spaced.
  • Roast the chicken skewers for 20-22 minutes, turning the skewers halfway through to ensure even cooking and achieve a nice char on the chicken.
  • Meanwhile, prepare the parmesan butter sauce. Melt the butter in a microwave-safe bowl until it is completely melted.
  • Add the parmesan cheese, parsley, garlic, salt, and pepper to the melted butter and mix well.
  • Once the chicken skewers are out of the oven, brush the prepared parmesan butter sauce over the chicken skewers.
  • Garnish the chicken skewers with freshly chopped parsley and serve them over rice to enjoy.

Notes

  • Soak wooden skewers in water for about 30 minutes before threading the chicken to prevent them from burning in the oven.
  • Storing: Store oven chicken skewers in an airtight container in the refrigerator for up to 3-4 days.
  • Reheating: Reheat in the oven at 450 degrees Fahrenheit until warmed through.
  • Freezing: Allow them to cool completely before freezing in an airtight container. They will last 1-2 months.
