Ingredients

For the Chicken

  • 1 ½ lb chicken breasts
  • 1 tablespoon taco seasoning
  • 1 teaspoon ground cumin
  • ¼ teaspoon salt
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil

For the dressing

  • ½ cup sour cream
  • cup fresh cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • ½ teaspoon salt
  • ½ teaspoon ground pepper

For the Salad

  • 4 cups Romaine lettuce roughly chopped
  • 1 cup black beans drained and rinsed
  • 1 cup canned corn drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 jalapeno sliced
  • Lime slices to garnish

Instructions

  • Pat dry the chicken breasts with a kitchen towel. Marinade the chicken with taco seasonings, ground cumin, salt, lime juice, and olive oil. Allow the chicken to marinate for at least 30 minutes.
  • Heat a grill pan or outdoor grill; add the chicken breasts and cook over medium heat for 4-5 minutes until the chicken is cooked through with beautiful grill marks. Transfer the grilled chicken to a plate and set it aside.
  • Meanwhile, prepare the dressing; in a food processor combine the sour cream, cilantro, olive oil, lime juice, salt, and pepper. Grind until smooth and creamy. Set it aside.
  • Prepare the salad ingredients and mix them in a large bowl. Add the cooked chicken on top and drizzle the prepared dressing over the salad.
  • Garnish the salad with lime slices and serve immediately.

Notes

  • Allow the chicken to marinate for at least 30 minutes. This will infuse the chicken with flavor and tenderize it. For an even stronger flavor, marinate the chicken for a few hours or overnight in the refrigerator.
  • Preheat your grill pan or outdoor grill to medium heat. 
  • Cook the chicken breasts until they reach 165 degrees F when checked with a digital meat thermometer. Make sure not to overcook the chicken to keep it juicy and tender.
  • Once the chicken is cooked, allow it to rest for a few minutes before slicing it. This helps retain the juices and ensures that the chicken remains moist.
  • You can make the dressing ahead of time and store it in the refrigerator. This allows the flavors to meld together, making the dressing even more flavorful. Just give it a good stir before drizzling it over the salad.
  • Customize the salad with additional ingredients based on your preferences. You can add diced avocado, sliced red onions, shredded cheese, or crushed tortilla chips for added texture and flavor.
  • Serve the salad immediately after adding the dressing.
